Pulled Beef Tostadas

There are many recipes where you can use leftover Pulled Beef and Tostadas are only one of those great uses.  If you’re looking for a quick mid-week meal then Tostadas are a wonderful change from Tacos or Burritos.  If you prefer, you can make your own refried beans and Tostada shells but to simplify the meal I chose to use canned refried beans and packaged Tostada shells.  Here in California you’ll find Tostada shells in virtually every market.
