As we enjoy zucchini squash I decided to give these noodles a shot.
I didn't realize that there are so many spiral vegetable slicers each with their own range of versatility and prices to match. Spiral slice 3 to 5 medium zucchini squash into a colander. Lightly salt and toss the spiraled zucchini and allow it to sit in a sink or on paper towel for 15 to 20 minutes. Wrap the zucchini in paper towels and gently squeeze to remove remaining moisture.
While the noodles are draining, mix leftover hickory smoked chicken with sauteed celery/onion/mushrooms and a jar of your favorite Alfredo sauce.
