Roasted Chicken Quarters

Roasting Chicken Quarters on a wood pellet smoker-grill at 350-400ºF with Hickory makes for a savory protein entree.  Once you’ve tasted food prepared on a pellet smoker-grill you’ll know why people are lavishing such great praises.  

Trimmed a couple of Fresh Foster Farms Chicken Quarters of any excess skin & fat.  Rubbed Annie’s Roasted Garlic Extra Virgin Olive Oil and Plowboys BBQ Yardbird Rub under and over the skin.  Wrapped the seasoned Chicken Quarters in plastic and refrigerated overnight.  Preheated my Auber PID modified Traeger PTG grill in the Manual Mode with Pacific Pellet Gourmet Hickory wood pellets to ~ 350ºF – a power setting of 35%.  Roasted the Chicken Quarters to an internal temperature of 180ºF.  Rested the chicken under a loose foil tent for 20 minutes before serving.

   

The iGrill generates wonderful graphs that you can then email to yourself.  I love gadgets and tools that help me see what my grill and food is doing.  Note that after a preheat period and the occasional downward spike where I open the lid to put the food in and take photos the temperature swings are minimal in the Manual Mode.  The Auber PID does an excellent job at controlling the small Traeger PTG.
