Paleo Chicken Drumsticks

Combining my new found Paleo lifestyle with my passion for smoking meats and cooking is a match made in heaven.  I get to improve my health, lose weight, and eat great food.  To date, in 6 weeks, I’ve trimmed off 23 pounds!  Yes, I have a ways to go but for the first time in a long while I’m seeing positive results and feeling great doing it.

I don’t profess to be a Paleo lifestyle expert by any means!  I leave that to the professionals and those who think they are.  I’m not a Paleo purist and subscribe in general to the 80/20 theory.  I adhere to Paleo 80% of the time while allowing myself some wiggle room 20% of the time.  Like most people, I’ve struggled with my weight for decades and have tried many diets/fads … losing weight – only to gain it back – over and over again!  What I do know is how to smoke/cook.  So enjoy my Paleo posts and bear in mind that if you’re looking for expert Paleo advise then please search elsewhere.  But if you’re looking for great recipes, info, techniques, etc you can apply to your Paleo lifestyle then read on!

Who doesn’t enjoy chicken drumsticks?  They’re my Grandchildren’s favorite and easy to fix using a MAK 2 Star General Wood Pellet Smoker Grill.  I find that seasoning chicken under and on the skin is essential.  Peel back the skin of the drumsticks and rub some Extra Virgin Olive Oil under and on the skin before applying your favorite chicken rub/seasoning.  Wrap the seasoned drumsticks with plastic wrap and refrigerate them for 3-5 hours.

Preheat your wood pellet grill to 350ºF using Pacific Pellet Gourmet Hickory BBQ Pellets.  Using a Leg and Wing Rack really makes the job a lot easier and really cooks the drumsticks evenly.  While using a Wood Pellet Smoker Grill achieves great results you can use this recipe in your oven, charcoal/propane grill, etc. as long as you can maintain a set temperature.

   

Roast the chicken drumsticks to an Internal Temperature of 180ºF +.  Allow the drumsticks to rest for 15 minutes under a foil tent.

   

Serve the Chicken Drumsticks with a side of salad, an avocado wedge, and mashed cauliflower.  Mashed cauliflower is great and easy to fix.  Just steam a head of cauliflower and mash it with a dab of butter and salt/pepper to taste.  My 20% non Paleo for this recipe would have to be the salad dressing and for some the dab of butter.  I enjoy Johnny’s Dressing Classic Caesar on my salads which I find at Costco.
