Apple Smoked 20 lb Turkey

This was a post Thanksgiving Turkey … Had all the deep fried Turkey and smoked Ham I wanted with all the trimmings at our Thanksgiving meal hosted by my Son and Daughter-In-Law.  Wonderful time was held by all and no one walked away from the table hungry.  So why would anyone Apple Smoke a 20 pound Turkey 2 days after Thanksgiving?  Well, it’s Costco’s fault!!  We were shopping for some vegetables and fruit when we saw some lovely Foster Farms Fresh Young Turkey on sale for 49¢ a lb.  Picked out the smallest one which weighed in at a mere 20 pounds … We really didn’t need any more turkey but the thought of having a good supply of cheap leftovers for casseroles, soups, and sandwiches won me over.

Thanksgiving Shank Portion Hams

My contribution to this year’s Family Thanksgiving Dinner was two Hams.  I don’t normally buy Shank Portion Hams but given the price of food these days and a savings of 60¢ to $1.40 per pound over other Hams it prompted me to give the Shank Portion a try.  Besides, doesn’t everything simply taste that much better when it cooked on a Wood Pellet BBQ smoker-Grill!?

First thing I noticed about the Shank Portion Ham was that the pig skin was still on the Shank.  At 325ºF it caused the skin to be charred and crispy … some might think it was burned due to it’s black appearance but the Ham itself was simply fantastic  Shocked  Big Smile Read More

Marinaded Chicken Drumsticks

One of the joys of having 3 of our 5 Grandchildren visiting for a few days is being able to cook one of their favorites meals … Chicken Drumsticks … Their tastes vary but on this they all agree and I’m more than happy to cook it for them.  Decided to fix them the old fashioned way by marinading them overnight rather than using my Marinade Express.  Either way, they’re easy to prepare and as you can see they turned out delectable!!  Who wouldn’t sink their teeth into one of these beauties?

Roasted Pork Loin

Pork Loins are the leanest and most tender pork cuts. Be careful to avoid overcooking any cut of pork from the loin.  Today I roasted a Pork Loin to an Internal temperature of 150ºF.  Costco Pork Loins average 10 pounds but with only the two of us at home they are too large to serve for a weekday meal.  I first became curious when I noticed at my local Costco that their 2 inch center cut Pork Chops were about $1.40 more a pound than their Pork Loin. Spoke to the Butcher and discovered that I can cut my own Center Cut Boneless Pork Chops from the Pork Loin.  Processed the Pork Loin into two 3 pound Pork Loin Roasts and 5 meals of 1 inch thick center cut Pork Chops (2 per package). Buying in bulk and vacuum sealing the various cuts saves us $Money$ and eases our food budget.

Stuffed Roasted Chicken in Wood Pellet Grill

As the weather begins to cool this time of year my cravings for the comfort of a simple but delicious roasted Chicken increase.  Like most, I have stuffed a multitude of Turkeys over the years but I honestly can’t remember stuffing a chicken.  Roasting a stuffed whole fresh chicken couldn’t be simpler, is quite economical, and when cooking for two there are always leftovers to graze on the next day.
