Infrared Chicken Drumsticks

Char-Broil The Big Easy Infrared Smoker, Roaster and Grill (SRG) is a fantastic poultry cooking machine.  The stainless steel burner generates up to 18,000 BTUs on high, 9000 BTUs on low.  It can fry up to a 25 lb. turkey in the stainless steel cooking chamber using oil-less infrared heat and there’s now 2 models:  Propane and Electric.  I use the propane version.

Peeled back the skin from a dozen Foster Farms Chicken Drumsticks and rubbed with Annie’s Roasted Garlic Extra Virgin Olive Oil and Plowboys BBQ Yardbird Rub.  Carefully repositioned the skin and rubbed the EVOO and Yardbird Rub on the skin.  Rested the seasoned chicken legs in the refrigerator for 3 hours.

The half-rack leg holders are a great way to roast chicken drumsticks or leg quarters.

Into the SRG on HIGH with the Lid Open for about an hour till the Internal Temperature of the legs reach 180ºF.  Rested the Chicken Drumsticks for 15 minutes under a foil tent and ready to serve.

    I have the oil-less turkey fryer. Thanks for the timing recommendation. Can’t seem to find those anywhere. Great advice, but I struggled with the varying sizes of legs and the multiple tiers. The lower tier got done about 15 minutes before the top tier. Removed the lower, and dropped down the top.

    I love this grill and am having a lot of fun trying new things.

    Great recipe. We have the SRG, but not the leg holders. So I cut steel coat hangers 2.5” and stuck them through lower legs after sticking lower legs through the 1/2 racks. Worked ok.
