Apple Smoked Turkey Halves

I’ve Smoked Turkeys Whole, spatchcocked, Bone-In Breast, Roasts, Drumsticks, and Wings but until now I’d never Smoked Turkey Halves.  After all, Turkey need not be for Holidays only and variety is the spice of life!  Found a 14 lb Turkey for only $4.09 … on sale at 29¢/lb at Save Mart … Removed the backbone, split the breast, and trimmed any excess fat and skin.

  

Rubbing EVOO and seasonings on and under the skin makes all the difference in the world.  I find that it produces deliciously moist results.  I prefer using Annie’s Roasted Garlic EVOO and Jans Dry Rub.  Refrigerated the seasoned Turkey Halves overnight in their own 2 Gallon Ziploc bag.

   

Preheated the MAK 2 Star Wood Pellet BBQ Smoker-Grill to 180ºF (Smoke Setpoint) for 30 minutes with Apple wood BBQ pellets.  Apple Smoked the Turkey Halves for 3 hours and bumped the temperature to 325ºF.

   

Cooked the Turkey Halves till the Internal Temperature reached 165ºF at the thickest part of the breast.  The Turkey turned out exceptionally moist with an ample Apple Smoke flavor.

   

Rested the Turkey Halves under a foil tent for 20 minutes before serving.  Note the clear liquid after the rest denoting that the bird was cooked to perfection.  Plenty of Turkey for dinner, sandwiches, and casseroles!
