3 Recipes for under $10 using Costco Rotisserie Chicken

If you’ve never bought a Costco Rotisserie Chicken then you’re missing a real treat.  Not only are they HUGE but they’re delicious.  Learned from an employee that their Chickens (on the West Coast) are fresh birds exclusively provided to them by Foster Farms.  If you price a fresh whole chicken you’ll see that you’ll be hard pressed to buy a chicken today for under $5 and that doesn’t include your time and fuel (BBQ pit, oven, etc) to cook one.

When we visit Costco I make it a point to pick up one of two Rotisserie Chickens to eat that day or pull for recipes that require cooked chicken.   Here’s 3 scrumptious recipes, Asparagus & Chicken Casserole, Chicken Vegetable Soup, and Twice Baked Chicken Potatoes that are sure to please and satisfy your family without hurting your pocketbook!

Recipe for Asparagus & Chicken Casserole:

  • Cooked chopped Asparagus (1 lb), Onions, Celery, Red Bell Pepper, and Mushrooms in EVOO
  • Mix vegetables with diced chicken, cream of mushroom soup, sour cream, and shredded cheese
  • Bake at 350ºF for 45 minutes.  Add shredded cheese on top and bake for another 15 minutes
  • Serve on a bed of rice

Asparagus is high in Folic acid and is a good source of Potassium, Fiber and Vitamins A, B6 and C.

   

Recipe for Chicken Vegetable Soup:

  • Use your favorite Chicken Soup recipe adding vegetables of your choice, noodles, potatoes, and/or rice with an ample amount of rotisserie Chicken.

Recipe for Twice Baked Chicken Potatoes:

  • Bake potatoes using your favorite method …  I like to rub my spuds with EVOO & season with Fagundes before baking them in the SRG for about 1½ hours till the IT reaches 210ºF
  • Cooked finely chopped Onions, Red Bell Pepper, and Mushrooms in EVOO
  • Cut baked potatoes lengthwise, scoop them out and made mash potatoes (add salt, pepper, butter, milk to taste).  Mix mashed potatoes with vegetables, diced chicken, and cream cheese (at room temperature)
  • Spoon mixture back in potato skins, top off with shredded cheese, and dust with smoked paparika
  • Bake at 350ºF for 30 – 45 minutes in oven but I baked them in my MAK 2 Star pellet grill using Hickory pellets
