Smoked Turkey Scalloped Potato Casserole

If you’re searching for a recipe to use leftover Smoked Turkey or Chicken then search no more!  Here is an easy comfort food casserole that I threw together using the leftovers from a Smoked 14 lb Spatchcock Turkey.

Ingredients:  Potatoes, Red Onion, Red Bell Pepper, Flour, Butter, Garlic & Seasoning Salt, Granulated Garlic, Black Pepper, Shredded Cheese, Leftover cubed Turkey, and Milk.

   

In a greased casserole dish layer evenly sliced potatoes, red onions, red bell peppers

   

Flour, season with garlic & seasoning salts, granulated garlic, black pepper and pats of butter

   

Layer smoked turkey and shredded cheese

   

Cover with sliced potatoes, and milk to above the flour layer.  Finish with pats of butter and seasonings to taste.  Bake in a preheated 350ºF oven for 1½ hours till potatoes are done.  Serve with your favorite side of vegetables or salad.

      Boy, that was an oldie but goodie recipe which goes back to 2012. It was and is a delicious recipe if you have some leftover smoked turkey and you enjoy scalloped potatoes. Back in those early days of my Blog I relied more on photos than the actual recipe. The recipe for the scalloped potatoes came from a very old edition of a Betty Crockett cookbook dating back to the 1970s. The amount of flour that you use is just enough for a light coating of each layer of ingredients. Then I pour enough whole milk to come up to the bottom of the top layer. Don’t worry if you use a little too much flour cause it will only make the scalloped potato sauce that much thicker. Too much milk and it might make the sauce boil over. Make sure you cover the casserole tightly with foil. Flour, spices, and milk is a quick and dirty way of making scalloped potatoes. Sometimes I make a white cream sauce to used instead of the dry ingredients (flour, spices, and milk). Hope this answers your questions. If not, feel free to email me at pete@smokinpetebbq.com

      Wow, that was almost 10 years ago! A blast from the past … Back then I wasn’t much into ingredient measurements. After I wrote my book, which has sold over 65,000 copies, I learned to pay attention to measurements.

      Unfortunately, you need to extrapolate from the photos. Note that the ingredients call for the following: Potatoes, Red Onion, Red Bell Pepper, Flour, Butter, Garlic & Seasoning Salt, Granulated Garlic, Black Pepper, Shredded Cheese, Leftover cubed Turkey, and Milk.

      Use a 9″ x 13″ casserole dish. I probably used 5-6 large sliced red potatoes, a median sliced red onion, a sliced red bell pepper, sprinkled an even layer of flour, butter pats, seasonings, maybe 2 cups of shredded sharp chedar cheese, cubed smoked turkey, and enough milk above the layer or flour. Cover and bake till the taters are soft … enjoy. I hope this helps. Just play with the ingredients. I use recipes as suggestions and not a guide set in stone. Experimenting and adding your own tweaks to recipes is a lot of fun.
