Shrimp Stuffed Apple Smoked Pork Loin Chops

What could be more delectable than a Shrimp stuffed Center Cut Pork Loin Chop Hickory smoked to perfection?  Why purchase boneless Pork Chops at your local Butcher or Grocery Store when you can custom slice your own?  Visited my local Costco and noticed that their 2″ center cut Pork Chops were about $1.40 more a pound than their Pork Loin.  Spoke to the Butcher and discovered that I can cut my own Center Cut Boneless Pork Chops from the Pork Loin.  Purchased a 10 pound Pork Loin and processed it into two 3 lb Pork Loin Roasts and 5 meals of 1 inch Pork Chops (2 per package).  Buying in bulk and vacuum sealing the various cuts will save you $$ and ease your food budget.

Flattened the 1″ Pork Chops to about a ¼ inch thick using a Meat Tenderizer Mallet and lightly seasoned them with Annie’s Roasted Garlic Extra Virgin Olive Oil and Head Country Championship Seasoning.

   

Shrimp Stuffing Ingredients:

  • Food processed fully cooked Shrimp
  • Sautéed Mushrooms, Onions, Celery, and Red Peppers
  • Italian Bread Crumbs
  • Cream Cheese at room temperature
  • Minced Garlic, Salt, and Pepper to taste

Mix all ingredients and spoon an ample amount of Shrimp Stuffing on each flattened Pork Chop.  Fold or roll the Pork Chops and secure the chops with toothpicks, string, or cooking bands.

   

Shrimp Stuffed Center Cut Pork Chops can be refrigerated for up to a day before use.  Preheated the MAK 2 Star General Wood Pellet BBQ Smoker-Grill to 180ºF (Smoke setting) with Apple wood BBQ pellets.  Smoked the Pork Chops for 30 minutes.

   

After smoking the Chops for 30 minutes I increased the temperature to 325ºF until the Internal Temperature reached 155ºF.  Meanwhile, cleaned and steamed fresh Asparagus and Brussels Sprouts.
