Picked up a couple of 2 lb Jimmy Dean Original Pork Sausages at Sam’s Club the other day and proceeded to cut them in half and vacuum sealed 3 lbs while keeping one aside for dinner. Visited the Jimmy Dean website and found this simple Stuffed Pasta Shell recipe. Been a while since we enjoyed some Pasta in any form so this was a welcomed change.
Ingredients:
- 20 uncooked jumbo pasta shells
- 1 lb pkg Jimmy Dean Regular Pork Sausage
- 1 Onion, chopped
- 1 Green or Red Bell Pepper, chopped
- 2 cloves minced garlic
- 15 oz Ricotta cheese
- 2 cups shredded Mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 egg
- 2 Tbsp chopped Fresh/Dried Parsley
- ½ tsp Dried Oregano
- 1 jar (24-26 oz) Spaghetti Sauce
Directions:
- Preheat oven or MAK 2 Star General Wood Pellet BBQ Smoker-Grill to 350ºF
- Cook shells according to directions (about 9 minutes)
- Cook sausage, onion, green/red pepper, garlic and drain
- Mix Ricotta, half the Mozzarella and Parmesan, egg, parsley & oregano in a large bowl
- Stir in drained sausage to mixture
- Spread 1 cup of spaghetti sauce on the bottom of a 13×9″ baking dish
- Fill each jumbo pasta shell with about ¼ cup of sausage mixture
- Cover stuffed shells with remaining spaghetti sauce and remaining mozzarella & parmesan
- Bake 50-60 minutes covered with foil at 350ºF until shells are thoroughly heated and cheese is melted & lightly brown. Uncovering after 30 minutes.
Serve with Garlic Bread and a nice green salad … Bon Appétite
