This Low Carb Cheesy Mashed Cauliflower recipe is cheesy, creamy, and absolutely delightful. It's loaded with healthy fats and can be used as a side and/or a topping for many casseroles.
Ingredients:
- 1 large head of cauliflower cut into small florets
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup mascarpone cheese
- 1/3 cup sour cream
- 2 Tbsp butter
- 1 tsp garlic salt
- 1/2 tsp black pepper
Directions:
- Steam the cauliflower florets until tender (18 - 20 minutes)
- Mash the cauliflower in a large bowl or use a food processor
- Add the remaining ingredients
- Whip or pulse the cauliflower until smooth and creamy
- Serve the cheesy mashed cauliflower immediately or use as a topping on a casserole
