Low Carb Cheesy Mashed Cauliflower

This Low Carb Cheesy Mashed Cauliflower recipe is cheesy, creamy, and absolutely delightful. It's loaded with healthy fats and can be used as a side and/or a topping for many casseroles.


  • 1 large head of cauliflower cut into small florets
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup mascarpone cheese
  • 1/3 cup sour cream
  • 2 Tbsp butter
  • 1 tsp garlic salt
  • 1/2 tsp black pepper


  • Steam the cauliflower florets until tender (18 - 20 minutes)
  • Mash the cauliflower in a large bowl or use a food processor
  • Add the remaining ingredients
  • Whip or pulse the cauliflower until smooth and creamy
    • Serve the cheesy mashed cauliflower immediately or use as a topping on a casserole
