Here’s a Quick and Dirty hot smoked Costco farmed Atlantic Salmon recipe. Not going to discuss the Pros and Cons of fish farming but I do have confidence in the Seafood, Chicken, Pork and Beef that Costco sells. Been known to spend 8-12 hours smoking salmon in the Bradley smoker but when we want to just enjoy a salmon filet I turn to this recipe.
Preheat the MAK 2 Star General Wood Pellet BBQ Smoker-Grill with Pacific Pellet Gourmet Alder BBQ Pellets at the smoke setting (180º-200ºF). Season the salmon filets lightly with Fagundes Famous Seasoning and smoke the salmon filets for an hour with Alder pellets. Bump the MAK 2 Star temperature to 300ºF until the Internal Temperature of the filets reach 140ºF (about an additional 25 minutes) …
Serve with Vegetable Fried Rice and a little green salad. Bon Appétite! :-bd
