Hickory Smoked Head Country Seasoned Pork Sirloin Tip Roast

Rubbed a 2¾ lb Costco Kirkland Swift Premium Pork Sirloin Tip Roast with Annie’s Roasted Garlic EVOO for the glue and Head Country All Purpose Championship Seasoning.  Wrapped with plastic and into the refrigerator overnight.

Removed the Pork Tip Roast from the fridge ½ hour before inserting it in the preheated MAK 2 Star General Wood Pellet BBQ Smoker-Grill to 250ºF using Hickory wood BBQ pellets.

Took 2¾ hours for the Sirlion tip to reach an Internal Temperature of 150ºF.  Pulled the roast and rested it under a foil tent for 20 minutes before serving.  You need to make sure that you take your Pork to at least 145ºF.  After resting, the IT reached 153ºF and was exceptionally moist and flavorful.

The new USDA cooking recommendations clarify long-held perceptions about cooking pork. Historically, consumers have viewed the color pink in pork to be a sign of undercooked meat.  If raw pork is cooked to 145 °F and allowed to rest for three minutes, it may still be pink but is safe to eat. The pink color can be due to the cooking method, added ingredients, or other factors.

The Money $Shot$ …  Hickory smoked Head Country All Purpose Championship seasoned Pork Sirloin Tip Roast, Mashed Potatoes and Brown Gravy served with a side of Pork Stuffing and steamed Brussels Sprouts.
