Hazelnut Smoked Beef Boneless Chuck Cross Rib Roast

With the prices of Beef skyrocketing you’ll find that a Boneless Chuck Cross Rib Roast may just be what your wallet is looking for.  Found a nice 2 lb Cross Rib Roast at Save Mart for $2.99/lb to smoke at 230ºF on the MAK 2 Star Wood Pellet BBQ Smoker-Grill using Hazelnut Blend BBQ Pellets.

The Cross Rib Roast is located above the Brisket and is a leaner cut of meat that contains a lot of flavor. The Cross Rib Roast has tough and stringy fibers that need to be cooked low and slowly to make the meat tender.

   

Rubbed Cross Rib Roast with Annie’s Roasted Garlic Extra Virgin Olive Oil and Fagundes Meats Prime Rib & Roast Seasoning.  Banded the Roast with silicone hot cooking bands and wrapped it in Plastic before refrigerating overnight.

   

Smoked the Cross Rib Roast at 230ºF until the Internal Temperature reached 147ºF.  For planning purposes it took me 2 hours and 40 minutes for the 2 lb roast to reach temperature.  Depending on your preference, the Cross Rib Roast can be pulled at 135º to 160ºF.  I find that pulling at 145ºF and resting 20 minutes under a loose foil tent gives us medium-rare to medium results.  I recommend the use of an Instant Read Thermometer to verify your pellet smoker-grill meat probes.
