Smoked Butt Portion Ham & Scalloped Potatoes

Do you have one of those Ready-to-Eat Hams in your refrigerator or freezer that you bough over the holidays when they were on sale to get you into that grocery or big box store?  Well it’s time to break it out and provide your family with a mouth watering dinner!  Just like Turkey … why only have Ham during holidays?  With Hams costing in the $2.25/lb range these days that 8½ pound Shank Portion Ham I picked up at 88¢/lb ($7.52) works out perfect.  I only wish I had picked up a couple extra Hams … Here’s one smoked/cooked to perfection on a MAK 2 Star Wood Pellet BBQ Smoker-Grill using Pacific Pellet Gourmet BBQ Hickory Pellets.

Started with an 8½ pound Cook’s Hickory Smoked (Ready-to-Eat) Shank Portion Ham.  The instructions call for cooking this Ham for 20-25 minutes per pound at a temperature of 325ºF.  At this temperature I estimated the Ham would take 3½  hours to reach an internal temperature of 140ºF and 2½ hours for the Scalloped Potatoes.

Preheated the MAK 2 Star Wood Pellet BBQ Smoker-Grill to 325ºF using Pacific Pellet Gourmet BBQ Hickory Wood Pellets.  Put the Ham in for an hour before inserting the Scalloped Potatoes.

   

While the Ham came to an internal temperature of 140ºF I made some fresh No-Knead rolls.

   

Double wrapped the Ham in foil and allowed it to rest for 30 minutes before serving.  The flavors developed in the MAK 2 Star with Hickory wood pellets are exceptional and will sure to please your family and guests.
