Zucchini Noodles with Smoked Chicken Alfredo

If you're watching your carbohydrates or you want a refreshing change to traditional pasta then may I suggest that you try some spiral sliced zucchini squash noodles topped with a simple but delicious Smoked Chicken Alfredo. I often cruise the internet for new and healthy ideas for our dinner table. Having been told to watch my carbs I kept running into Paleo zucchini noodle recipes. As we enjoy zucchini squash I decided to give these noodles a shot.

I didn't realize that there are so many spiral vegetable slicers each with their own range of versatility and prices to match. Spiral slice 3 to 5 medium zucchini squash into a colander. Lightly salt and toss the spiraled zucchini and allow it to sit in a sink or on paper towel for 15 to 20 minutes. Wrap the zucchini in paper towels and gently squeeze to remove remaining moisture.

While the noodles are draining, mix leftover hickory smoked chicken with sauteed celery/onion/mushrooms and a jar of your favorite Alfredo sauce. Seasoned with granulated garlic/salt/pepper to taste and simmered for 15 minutes ... I did say that the smoked chicken Alfredo was simple ... yet delicious!

Fry the zucchini noodles in 2 tbsp of [easyazon_link keywords="california olive ranch" locale="US" tag="ftd-20"]Roasted Garlic EVOO[/easyazon_link] over medium/high heat for 5 to 7 minutes, stirring frequently, until the noodles are al dente (firm to the bite) or softer.

Immediately serve the fried spiraled zucchini noodles topped with a portion of smoked chicken Alfredo. I think you'll enjoy my version of a low carb Paleo recipe. Discovered that the fried noodles are delicious on their own and would be great as a side dish.
