Then try stuffing one with the goodness of your favorite sausage! That's what inspired me to combine a Kielbasa with a pork loin roast. I took my sharp filet knife and cut a slit through the pork loin and pushed a sausage into the center. Turned out so good that I'm looking forward to my next stuffing inspiration! Stay tuned to see what that will be ...<\/p>\n<blockquote>\n<p><span class=\"_Tgc _y9e\"><em>You can safely cook pork to <b>145\u00b0F<\/b>, which is medium rare. The U.S. Department of Agriculture (USDA) recommends that pork be cooked to an <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">internal temperature<\/a> of <b>145\u00b0F<\/b>, followed by a 3 minute rest time, to enjoy pork that is tender, juicy, and full of flavor.<\/em><br \/><\/span><\/p>\n<\/blockquote>\n<p>Ever since the present USDA standards came out I have been taking my pork to 145\u00baF versus the old standard of 160\u00baF and I haven't looked back ... Notice how juicy the stuffed kielbasa stuffed pork loin turned out. I can attest to the fact that it tasted as scrumptious as it looks. Yes, it was extremely tender too! The smoke ring does not alter the taste of the pork loin but it certainly looks impressive.<\/p>\n<\/div><\/div><\/div><\/div><div id=\"pg-9573-2\"  class=\"panel-grid panel-no-style\" ><div id=\"pgc-9573-2-0\"  class=\"panel-grid-cell\" ><div id=\"panel-9573-2-0-0\" class=\"so-panel widget widget_virtue_about_with_image virtue_about_with_image panel-first-child panel-last-child\" Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">extra virgin olive oil<\/a> and seasoned the roast with <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/the-wood-pellet-smoker-and-grill-cookbook-recipes-and-techniques-for-the-most-flavorful-and-delicious-barbecue\/\" target=\"_blank\" rel=\"noopener\">Jan's Original Dry Rub<\/a>. Used Silicone <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Silicone Hot Cooking Bands\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/silicone-hot-cooking-bands\/\" data-shortcode=\"true\">Cooking Bands<\/a> to help keep the shape of the roast. Wrapped the roast with plastic and refrigerated overnight.<\/p>\n<p>Preheated my <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> General Wood Pellet Smoker-Grill to 250\u00baF with <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/cookinpellets-40h-hickory-smoking-pellets\/\" target=\"_blank\" rel=\"noopener\">cookinpellet.com 100% Hickory pellets<\/a>. Smoked the stuffed roast for approximately 2 hours to an <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">internal temperature<\/a> of 145\u00baF. Rested the roast for 10 minutes before slicing against the grain an serving with a side of baked beans and fresh steamed green beans.
