{"id":953,"date":"2011-07-07T13:19:45","date_gmt":"2011-07-07T21:19:45","guid":{"rendered":"http:\/\/www.smokinpetebbq.com\/?p=953"},"modified":"2011-07-07T13:19:45","modified_gmt":"2011-07-07T21:19:45","slug":"hasselback-potatoes-and-salmon","status":"publish","type":"post","link":"https:\/\/www.smokinpetebbq.com\/wordpress\/hasselback-potatoes-and-salmon\/","title":{"rendered":"Hasselback Potatoes and Salmon"},"content":{"rendered":"<p>This Swedish Potato dish takes its name from Hasselbacken, the Stockholm Restaurant where it was first served.\u00a0 The seasoned potatoes turn out crisp on the outside and tender on the inside.\u00a0 Scrubbed some spuds and used a large spoon.\u00a0 Using a sharp knife, make slices across the potato the short way about 1\/8 to 1\/4 inch apart making sure to cut down to the lip of the spoon, not all the way through the potato.\u00a0 The slices should stay connected at the bottom, and the spoon helps keep the depth even.\u00a0 Place the potato in the bowl of water to prevent browning while you slice the other potatoes.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Recipes\/HasselbackSpuds07052011\/Hasselback1.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>When the potatoes are cut, drizzle the potatoes with melted butter, then season with salt and pepper.\u00a0 I chose to use Annie&#8217;s Roasted Garlic <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">EVOO<\/a> and <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Fagundes Seasoning\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/fagundes-seasoning\/\" data-shortcode=\"true\">Fagundes Seasoning<\/a>.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Recipes\/HasselbackSpuds07052011\/Hasselback2.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>Preheated the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> General Pellet Smoker-Grill to 425\u00baF with Alder wood BBQ pellets.\u00a0 Baked for an hour+.\u00a0 Tested the Hasselback Potatoes for tenderness since the Salmon will only take 12 &#8211; 18 minutes.\u00a0 Waited until the taters are done for the most part before inserting the Salmon.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Recipes\/HasselbackSpuds07052011\/Hasselback3.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>While Hassselback Potatoes are baking in the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a>, applied Kikkoman Teriyhaki Baste &amp; Glaze with Honey and Pineapple to the Salmon Filets.\u00a0 Enjoyed a nice glass of Amber Ale from one of the micro-breweries I visited last week.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Recipes\/HasselbackSpuds07052011\/Hasselback4.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>After an hour at 425\u00baF applied some butter pats to the Hasselback Potatoes and added the Salmon.\u00a0 You can also drizzle melted butter and sprinkle with some Romano Cheese on the taters if desired.\u00a0 The Salmon should be ready in 12 &#8211; 18 minutes when it easily flakes with a fork (145\u00ba).<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Recipes\/HasselbackSpuds07052011\/Hasselback5.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>Hasselback Potatoes and Teriyaki Salmon.\u00a0 Took ~ 1.5 hours.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Recipes\/HasselbackSpuds07052011\/Hasselback6.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>The Money $Shot$ &#8230;
