This year we smoked a New York Strip at my Son's house using his <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a>. The 8 pound NY top loin was <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/lumber-jack-20-pounds-bbq-grilling-wood-pellets-maple-hickory-cherry-mhc\/\" target=\"_blank\">hickory smoked<\/a> at 240\u00baF until the <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/maverick-et-735-bluetooth-4-0-wireless-digital-cooking-thermometer-monitors-4-probes-simultaneously\/\" target=\"_blank\">internal temperature<\/a> reached 135\u00baF. Rested under a foil tent for 15 minutes before carving. Served with baked potatoes and a nice green salad. Course we had munchies up the wazoo during the day - deviled eggs, stuffed mushrooms, guacamole dip, spinach dip, crab mold ... Yes there are - like Prime Rib\/Rib Roast or Ribeyes which are essentially the same except the bones have been removed. But for the price of $4.99\/lb you can't go wrong with a New York Top Loin when properly smoked. It came out so tender and juicy!<\/p>\n<p>Started with a 16 lb Choice grade New York strip at Costco and trimmed the fat cap and silver skin off. Cut the roast in half for our Christmas feast and cut the other half into eight 1 inch thick steaks. <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/foodsaver-4840-2-in-1-automatic-vacuum-sealing-system-with-bonus-built-in-retractable-handheld-sealer-starter-kit-heat-seal-and-zipper-bags\/\" target=\"_blank\">Vacuum sealed<\/a> the steaks into packages of 2 for grilling later.<\/p>\n<p>Rubbed on all sides of the trimmed New York strip with Roasted Garlic <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">Extra Virgin Olive Oil<\/a> and applied a liberal amount of <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Fagundes Seasoning\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/fagundes-seasoning\/\" data-shortcode=\"true\">Fagundes<\/a> Prime Rib Roast Seasoning. Wrapped the seasoned roast in plastic and refrigerated overnight. Preheated the wood pellet smoker-grill to 240\u00baF using <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/camp-chef-bag-of-premium-hardwood-hickory-pellets-for-smoker-20-lb\/\" target=\"_blank\">hickory wood pellets<\/a>. Smoked at 240\u00baF for approximately 3 hours until the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">internal temperature<\/a> reached 135\u00baF.
