Pulled pork is so delicious that I wonder why I waited so long. As you can see from the photo above a mixture bark, smoke ring, and pork makes for a strong luscious visual impact of the true beauty of pulled pork. I will say that IMHO there is no difference between a boneless and a bone-in pork butt. I've read and heard that some pitmasters claim that bone-in pork butts are better but I have not known that to be true. Those same pitmasters often rely on manually pulling the bone out to check when the butt is done. As I often say ... \"You can't hurt it cause it's already dead!\". Started out with an 8 pound boneless pork butt from Costco which I trimmed a few months ago and <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"FoodSaver Vacuum Sealer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/foodsaver-vacuum-sealer\/\" data-shortcode=\"true\">vacuum<\/a> sealed and froze. Gotta love the beauty and simplicity of <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/foodsaver-4840-2-in-1-automatic-vacuum-sealing-system-with-bonus-built-in-retractable-handheld-sealer-starter-kit-heat-seal-and-zipper-bags\/\" target=\"_blank\">vacuum sealers<\/a> these days. Months later I can enjoy products with no freezer burns and the quality of the meat is just as good as the day I bought the meat.<\/p>\n<p>Rubbed the boneless pork butt with roasted garlic <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">extra virgin olive oil<\/a> to act as the glue for the heavy application of <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/the-wood-pellet-smoker-and-grill-cookbook-recipes-and-techniques-for-the-most-flavorful-and-delicious-barbecue\/\" target=\"_blank\">Jan's Original Dry Rub<\/a>. The rub creates a bark on the butt to kill for. Before wrapping the seasoned pork butt with plastic and refrigerating it overnight I used <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Silicone Hot Cooking Bands\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/silicone-hot-cooking-bands\/\" data-shortcode=\"true\">Cooking Bands<\/a> to keep the roast in one piece.<\/p>\n<\/div><\/div><\/div><\/div><div id=\"pg-8935-4\"  class=\"panel-grid panel-no-style\" ><div id=\"pgc-8935-4-0\"  class=\"panel-grid-cell\" ><div id=\"panel-8935-4-0-0\" class=\"so-panel rel=\"nofollow\" target=\"_blank\" title=\"Premium 100% Hickory\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/premium-100-hickory\/\" data-shortcode=\"true\">hickory<\/a> pellets. It's really hard to beat <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/camp-chef-bag-of-premium-hardwood-hickory-pellets-for-smoker-20-lb\/\" target=\"_blank\">Hickory<\/a> when smoking\/cooking pork. <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/pacific-pellet-apple-bag-20-pound-apple-pellets\/\" target=\"_blank\">Apple pellets<\/a> are also a good choice to use with pork. <em>For planning purposes only: Took 6\u00bd hours from turning the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> ON to turning it OFF ... Add another 3 to 4 hours of FTC on top of the smoking\/cooking time.<\/em><\/p>\n<ul>\n<li>Place the seasoned pork butt on a Frog Mat and smoke at 225\u00baF with <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Premium 100% Hickory\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/premium-100-hickory\/\" data-shortcode=\"true\">hickory<\/a> for 3 hours<\/li>\n<li>After 3 hours, increase the pellet grill pit temperature to 325\u00baF and roast until the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">Internal Temperature<\/a> of the pork butt reaches 160\u00baF<\/li>\n<li>Remove the pork butt and double wrap in heavy duty foil<\/li>\n<li>Return the foil wrapped pork butt to your wood pellet grill and cook until the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">Internal Temperature<\/a> reaches 205\u00baF<\/li>\n<li>Remove the smoked\/cooked pork butt and wrap it in a towel<\/li>\n<li>Place the towel wrapped pork butt in a cooler for 3 to 4 hours\n<ul>\n<li>This procedure is better known as FTC - Foil, Towel, Cooler<\/li>\n<\/ul>\n<\/li>\n<li>Smoked boneless pork butt is now ready to be pulled\n<ul>\n<li>Be careful as the pork butt will still be extremely hot at this point<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p>I highly recommend you consider foiling your wood pellet grill grease pan. As you can see from the photo below each cook usually ends up with grease, oil, and residue. It's easier to replace foil than to scrape the gunk off!<\/p>\n<\/div><\/div><\/div><\/div><div id=\"pg-8935-6\"  class=\"panel-grid panel-no-style\" ><div id=\"pgc-8935-6-0\"
