My plan was to smoke\/cook a Tri-Tip every week for 3 months but alas, the best laid plans of mice and men often go awry. It's beginning to be apparent that my biggest challenge is keeping from duplicating previous cooks. Not that there's anything wrong with that cause no matter how I smoke\/cook these prime tri-tips they are simply some of the best cuts of beef I've tasted and cooked.<\/p>\n<p>What to do - what to do? If you're going to smoke\/cook a tri-tip roast on a <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> General wood pellet smoker-grill and\/or your grill of choice you need to smoke it first and then raise the temperature till you achieve your desired <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/thermoworks-thermopop-super-fast-thermometer-with-backlit-rotating-display\/\" target=\"_blank\">internal temperature<\/a>. I often smoke roasts at 180\u00baF to 250\u00baF for one hour before bumping the <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/maverick-et-735-bluetooth-4-0-wireless-digital-cooking-thermometer-monitors-4-probes-simultaneously\/\" target=\"_blank\">pit temperature<\/a> from 325\u00baF to 375\u00baF until the tri-tip roast reaches an <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/new-thermoworks-backlit-thermapen-mk4-professional-thermocouple-cooking-thermometer\/\" target=\"_blank\">internal temperature<\/a> of 145\u00baF.<\/p>\n<p>As always, I recommend rubbing your roast with a good roasted garlic <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">extra virgin olive oil<\/a> before applying a liberal amount of <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/the-wood-pellet-smoker-and-grill-cookbook-recipes-and-techniques-for-the-most-flavorful-and-delicious-barbecue\/\" target=\"_blank\">Pete's Western Rub<\/a> on all sides. Then bumped the pit temperature to 350\u00baF. Pulled the Tri-Tip roast when the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">internal temperature<\/a> reached 145\u00baF.
