Course, bacon makes EVERYTHING taste that much better and this recipe does not disappoint. Boneless pork loins are mildly favored, are relatively lean, and best cooked using low-and-slow method, moderate heat, or a combination of both. I prefer to infuse a touch of <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/cookinpellets-40h-hickory-smoking-pellets\/\" target=\"_blank\">Hickory smoke<\/a> before increasing the pit temperature and cooking the roast to an <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/maverick-et-735-bluetooth-4-0-wireless-digital-cooking-thermometer-monitors-4-probes-simultaneously\/\" target=\"_blank\">internal temperature<\/a> of 145\u00baF. Yesterday I decided to take the roast over the top by wrapping it in <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Premium 100% Hickory\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/premium-100-hickory\/\" data-shortcode=\"true\">Hickory<\/a> smoked bacon and am I glad I did ...<\/p>\n<p>Preheat your wood pellet smoker-grill (I prefer using a <a title=\"\" href=\"https:\/\/www.makgrills.com\/\" target=\"_blank\">MAK 2 Star<\/a> General) to 180\u00ba-190\u00baF with <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/camp-chef-bag-of-premium-hardwood-hickory-pellets-for-smoker-20-lb\/\" target=\"_blank\">Hickory<\/a> barbecue pellets and smoke the bacon wrapped pork loin for 45 minutes before increasing the pit temperature to 350\u00baF. Roast the pork loin roast at 350\u00baF until the <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/new-thermoworks-backlit-thermapen-mk4-professional-thermocouple-cooking-thermometer\/\" target=\"_blank\">internal temperature<\/a> at the thickest part of the roast reaches 145\u00baF. Rest the pork loin loosely under a foil tent for 15 minutes before carving against the grain and serving.<\/p>\n<\/div><\/div><\/div><\/div><div id=\"pg-8163-2\"  class=\"panel-grid panel-no-style\" As the photo below shows, a 10 pound boneless pork loin from Costco, Sam's Club, your local butcher shop, or grocery store will provide you with two 3 pound roasts and six 2 inch center cut pork chops. I've used items properly <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/foodsaver-v2244-vacuum-sealing-system\/\" target=\"_blank\">vacuum sealed <\/a>and frozen 6+ months later with no problems.<\/p>\n<p>Trim the fat cap and silver skin from the boneless pork loin. Rub the roast with roasted garlic <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">extra virgin olive oil<\/a> and season with a liberal amount of Plowboy's BBQ Bovine Bold rub.
