Found a killer deal at Costco where the peeled Tri-Tips were a mere $5.19 a pound. Got me a total of 12 roasts which will allow me to smoke\/cook one roast a week for the next 3 months if I choose to do so.<\/p>\n<p>Oh My Goodness ... I must admit that the results were simply scrumptious!! The Tri-Tip roast was smoked to perfection and so juicy and\u00a0 tender you could cut it with a fork. I prefer taking my Tri-Tips to an <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/new-thermoworks-backlit-thermapen-mk4-professional-thermocouple-cooking-thermometer\/\" target=\"_blank\">internal temperature<\/a> of 145\u00baF but by all means cook it to your preferred temp - lower or higher - it's all good.<\/p>\n<p>In the old days I could get Tri-Tips in the $3 range for Choice grade (which is now around $7 to $9 a pound here in California). So the $5.19 per pound for Prime was a steal. In case you've not heard of the term 'peeled' before it means that the fat cap has been trimmed off before packaging. I've always been able to find cheaper Tri-Tip roasts but with the fat cap intact which negates the cheaper price cause you're paying for the fat cap. The only thing left for me to do with a peeled Tri-Tip is to trim off any silver skin that might be present.<\/p>\n<\/div><\/div><\/div><\/div><div id=\"pg-8061-2\"  class=\"panel-grid panel-no-style\" ><div id=\"pgc-8061-2-0\"  class=\"panel-grid-cell\" ><div id=\"panel-8061-2-0-0\" class=\"so-panel widget widget_virtue_about_with_image virtue_about_with_image panel-first-child class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">extra virgin olive oil<\/a> before using a rub and\/or seasoning. Rubbed the Prime grade Tri-Tip roast with the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">olive oil<\/a> and seasoned liberally with <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Dry Rub Recipes\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/dry-rub-recipes\/\" data-shortcode=\"true\">Pete's Western Rub<\/a>. Wrapped the seasoned roast with plastic and refrigerated overnight. The recipe for <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Dry Rub Recipes\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/dry-rub-recipes\/\" data-shortcode=\"true\">Pete's Western Rub<\/a> can be found in my new book \"<a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/the-wood-pellet-smoker-and-grill-cookbook-recipes-and-techniques-for-the-most-flavorful-and-delicious-barbecue\/\" target=\"_blank\">The Wood Pellet Smoker &amp; Grill\u00a0 Cookbook<\/a>\".<\/p>\n<p>Preheat your wood pellet smoker-grill (I prefer using a MAK 2 Start General) to 225\u00baF using <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/camp-chef-bag-of-premium-hardwood-hickory-pellets-for-smoker-20-lb\/\" target=\"_blank\">Hickory<\/a> or your favorite wood pellet flavor for beef. <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/lumber-jack-20-pound-bag-100-oak-wood-bbq-grilling-pellets\/\" target=\"_blank\">Oak wood pellets<\/a> are a good choice also. <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/pacific-pellet-mesquite-bag-20-pound-mesquite-pellets\/\" target=\"_blank\">Mesquite<\/a> is also favored by many pitmasters.<\/p>\n<p>Smoke the Tri-Tip roast at 225\u00baF for approximately 2 hours until the <a href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/shop\/new-thermoworks-backlit-thermapen-mk4-professional-thermocouple-cooking-thermometer\/\" target=\"_blank\">internal temperature<\/a> reaches 145\u00baF.
