{"id":700,"date":"2011-05-27T15:40:22","date_gmt":"2011-05-27T23:40:22","guid":{"rendered":"http:\/\/www.smokinpetebbq.com\/?p=700"},"modified":"2011-05-27T15:40:22","modified_gmt":"2011-05-27T23:40:22","slug":"hickory-smoked-beef-brisket","status":"publish","type":"post","link":"https:\/\/www.smokinpetebbq.com\/wordpress\/hickory-smoked-beef-brisket\/","title":{"rendered":"Hickory Smoked Beef Brisket"},"content":{"rendered":"<p>Been yearning to do a Brisket for the longest time but just never got around to it.\u00a0 I didn&#8217;t have any good reason except &#8230; confidence and fear of the unknown!! &#8230;<\/p>\n<p>Picked up a little 12 lb Brisket from my local butcher, <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Fagundes Seasoning\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/fagundes-seasoning\/\" data-shortcode=\"true\">Fagundes<\/a> Meats &amp; Catering. Rubbed it with Annie&#8217;s Roasted Garlic <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">EVOO<\/a> for the glue and applied some <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Fagundes Seasoning\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/fagundes-seasoning\/\" data-shortcode=\"true\">Fagundes<\/a> Prime Rib &amp; Roast Seasoning along with a liberal amount of pepper. Not sure why everyone calls for lots of pepper but they know a lot than I do so I done did sprinkle a bunch of pepper!!\u00a0 Wrapped it in plastic food wrap and popped it in the fridge for about 2 days.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Beef\/MAKBrisket05262011\/Brisket1.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>Removed Brisket from fridge an hour before cooking. Preheated the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> General Pellet Grill to 225\u00baF using <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Premium 100% Hickory\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/premium-100-hickory\/\" data-shortcode=\"true\">Hickory<\/a> wood BBQ pellets. Estimated 18 hours @225\u00ba and 3 hours Foil Towel Cooler (FTC).\u00a0 Placed it on the Frog Mat covered grill with the Brisket fat side down.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Beef\/MAKBrisket05262011\/Brisket2.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>Eating at 7PM so I put the Brisket in the night before at 10 pm. Here&#8217;s what it looked like when I decided to take a snooze at 1 am.\u00a0 Made sure that the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> General pellet hopper was full before going to bed.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Beef\/MAKBrisket05262011\/Brisket3.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>After sleeping with one eye open watching my MAK Remote Boss Controller I roused myself up at 6:30 am. The <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">Internal Temperature<\/a> (IT) was at 159\u00baF with a good bark formation.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Beef\/MAKBrisket05262011\/Brisket4.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>Pulled the Brisket when <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">Internal Temperature<\/a> reached 197\u00baF. Five minutes shy of 18 hours! \u00a0 This is right before a 3 hour FTC.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Beef\/MAKBrisket05262011\/Brisket5.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>After 18 hours at 225\u00baF and 3 hours FTC it was time to slice up the Brisket and reap the fruits of my labor of love!<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Beef\/MAKBrisket05262011\/Brisket6.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>Note the nice smoke ring and bark!!<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Beef\/MAKBrisket05262011\/Brisket8.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>Chow time!!\u00a0 Soaked me a few beans, threw in some fixings, and simmered them all day. Served with a side of Cole Slaw and of course, corn on the cob which goes with everything.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Beef\/MAKBrisket05262011\/Brisket7.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>The Money $Shot$ &#8230; Bon App\u00e9tit!! &#8230;<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Beef\/MAKBrisket05262011\/Brisket9.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>Got my first of many OMG!! Our guests and my bride of 38 years could hardly get enough Brisket between all those OMG statements. I must admit that I hit a Grand Slam with my First Brisket. Very moist, tender yet firm enough to hold it&#8217;s shape, and the flavor of the beef was well complimented by a delicious bark.\u00a0 Don&#8217;t really think I can improve on this effort except cook\/smoke 3 Briskets next time.
