data-index=\"4\" ><div class=\"textwidget\"><p>Started by cold smoking some strip steaks on my <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> General using the Super Smoker Box accessory. See <a href=\"http:\/\/wp.me\/p4EdAa-1Bs\" target=\"_blank\">Cold Smoked New York Strip Steaks<\/a> post. Refrigerated the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Premium 100% Hickory\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/premium-100-hickory\/\" data-shortcode=\"true\">hickory<\/a> cold smoked steaks for a day to allow the smoke to mellow out through the meat. Setup the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> for direct cooking by uncovering the Flame Zone and using a Searing Grate. Set the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> to HIGH and preheated the pit with Pacific Pellet <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Premium 100% Hickory\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/premium-100-hickory\/\" data-shortcode=\"true\">Hickory<\/a> Gourmet barbecue wood pellets. Pit temperature reached 475\u00baF plus which is ideal for grilled cold smoked strip steaks.<\/p>\n<p>Removed the steaks from the refrigerator 30 minutes before grilling to allow them to come to room temperature. Rubbed the steaks with roasted garlic <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">extra virgin olive oil<\/a> and seasoned them with <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Dry Rub Recipes\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/dry-rub-recipes\/\" data-shortcode=\"true\">Pete's Western Rub<\/a>. You'll find the recipe\/ingredients for the rub in my upcoming Ulyses Press <em><a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"The Wood Pellet Smoker and Grill Cookbook\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/the-wood-pellet-smoker-and-grill-cookbook\/\" data-shortcode=\"true\">The Wood Pellet Smoker and Grill Cookbook<\/a><\/em> coming out in the Spring of 2016 just in time for barbecue season.<\/p>\n<p>Grilled the steaks for ~ 3 minutes, rotated them 90\u00ba to get the cross hatch grill marks, and grilled for an additional 2-3 minutes before flipping. Once flipped, grill the steaks for 3 to 7 minutes until cooked to your preference. Use a digital thermometer to check your <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">Internal Temperature<\/a>. I find that 135\u00baF gives me a nice medium rare steak.
