Dry Cure recipe which you can find at\u00a0 <a href=\"http:\/\/www.susanminor.org\/forums\/showthread.php?311-Canadian-Bacon\" target=\"_blank\">http:\/\/www.susanminor.org\/forums\/showthread.php?311-Canadian-Bacon<\/a><\/p>\n<p>Picked up a 4lb Pork Loin at my local Butcher, <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Fagundes Seasoning\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/fagundes-seasoning\/\" data-shortcode=\"true\">Fagundes<\/a> Meats &amp; Catering.\u00a0\u00a0 Followed the Dry-Cure recipe and rubbed the loin with the appropriate amounts of seasonings per pound.\u00a0 Double bagged the Pork Loin and placed in the fridge for 7 days.\u00a0 Rotated the loin everyday.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Pork\/CanadianBacon03102011\/CB1.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>Rinsed the Dry Cured Pork Loin and soaked the loin in cold water for 30 minutes.\u00a0 Pat dry and return to the fridge overnight allowing the Pork Loin to form pellicles.\u00a0 Remove the Pork Loin an hour before placing it the Original Bradley Smoker (OBS), Pellet Grill, or any smoker of your choice.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Pork\/CanadianBacon03102011\/CB2.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>Preheated the OBS to 225\u00baF.\u00a0\u00a0 Placed Dry Cured Pork Loin in the smoker and applied 2 hours and 20 minutes of <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"CookinPellets Apple Mash\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/cookinpellets-apple-mash\/\" data-shortcode=\"true\">Apple<\/a> smoke.\u00a0 Pull the loin when the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">Internal Temperature<\/a> (IT) reaches 145\u00baF.\u00a0 Here is what the Pork Loin should look like after the Canadian Bacon transformation.\u00a0 You must take the loin to at least 140\u00baF.\u00a0 The higher the IT the dryer your Canadian Bacon will become.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Pork\/CanadianBacon03102011\/CB3.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>Tent the Canadian Bacon under foil until the loin is cool enough to handle.\u00a0 Once the Canadian Bacon is cool, tightly wrap it in Plastic Food Wrap and place in the refrigerator for at least 2 days.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Pork\/CanadianBacon03102011\/CB4.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>Slice the Canadian Bacon into 1\/8&#8243;
