{"id":4819,"date":"2014-06-08T18:54:16","date_gmt":"2014-06-09T01:54:16","guid":{"rendered":"https:\/\/www.smokinpetebbq.com\/wordpress\/?p=4819"},"modified":"2014-06-08T18:54:16","modified_gmt":"2014-06-09T01:54:16","slug":"claussen-style-garlic-dill-knockoff-pickles","status":"publish","type":"post","link":"https:\/\/www.smokinpetebbq.com\/wordpress\/claussen-style-garlic-dill-knockoff-pickles\/","title":{"rendered":"Claussen-Style Garlic &#038; Dill Knockoff Pickles"},"content":{"rendered":"<p><a href=\"https:\/\/i0.wp.com\/www.smokinpetebbq.com\/wordpress\/wp-content\/uploads\/2014\/06\/pickles3.jpg?ssl=1\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4821\" src=\"https:\/\/i0.wp.com\/www.smokinpetebbq.com\/wordpress\/wp-content\/uploads\/2014\/06\/pickles3.jpg?resize=800%2C600&#038;ssl=1\" alt=\"Claussen-style pickles\" width=\"800\" height=\"600\" srcset=\"https:\/\/i0.wp.com\/www.smokinpetebbq.com\/wordpress\/wp-content\/uploads\/2014\/06\/pickles3.jpg?w=800&amp;ssl=1 800w, https:\/\/i0.wp.com\/www.smokinpetebbq.com\/wordpress\/wp-content\/uploads\/2014\/06\/pickles3.jpg?resize=300%2C225&amp;ssl=1 300w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p>I&#8217;ve always been a fan of Claussen pickles.\u00a0 I tolerate some of those other dill pickles but I always levitate back to Claussen.\u00a0 Why?\u00a0 It goes back to the early 1960s when I was about 12 years old and worked at a Deli sweeping floors.\u00a0 My salary &#8230; I could eat whatever I wanted and I chose Deli Pickles that came in those big barrels!\u00a0 Yup, I was hooked.<\/p>\n<p>I searched and chose 6 Claussen-style Knockoff recipes which I morphed into my own.\u00a0 Unlike canning, pickling does not require boiling the crispy goodness from your pickles and can be stored\/kept in your refrigerator for up to a year.\u00a0 Presuming they taste OK, mine won&#8217;t last that long!!<\/p>\n<p><!--more--><\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.smokinpetebbq.com\/wordpress\/wp-content\/uploads\/2014\/06\/pickles2.jpg?ssl=1\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4822\" src=\"https:\/\/i0.wp.com\/www.smokinpetebbq.com\/wordpress\/wp-content\/uploads\/2014\/06\/pickles2.jpg?resize=800%2C600&#038;ssl=1\" alt=\"Claussen-style pickles\" width=\"800\" height=\"600\" srcset=\"https:\/\/i0.wp.com\/www.smokinpetebbq.com\/wordpress\/wp-content\/uploads\/2014\/06\/pickles2.jpg?w=800&amp;ssl=1 800w, https:\/\/i0.wp.com\/www.smokinpetebbq.com\/wordpress\/wp-content\/uploads\/2014\/06\/pickles2.jpg?resize=300%2C225&amp;ssl=1 300w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p>I was going to try and grow my own pickle cucumbers but figured the chances of harvesting enough cucumbers at once to make it worthwhile to pickle were slim.\u00a0 So I checked with my local grocery store only to find that they didn&#8217;t have any pickling cucumbers in stock.\u00a0 Talked to the Produce manager and he said he would order me a lug of pickling cucumbers which he sold me at his cost &#8211; $22.50.\u00a0 Got me 19 quart jars out of it.<\/p>\n<p>Sterilize jars and wash the cucumbers &#8211;\u00a0 <em>DO NOT use regular store-bought cucumbers.\u00a0 They are usually coated with wax to preserve them over long shipping\/storage periods which does not bode well with the pickling\/canning processes.<\/em><\/p>\n<p><strong><span style=\"text-decoration: underline;\">Brine<\/span>:<\/strong><br \/>\nThis makes enough brine for 4 quart jars.\u00a0 No need to boil the brine.\u00a0 Combine in a large pitcher. Stir until salt is dissolved.\u00a0 Set aside.<\/p>\n<ul>\n<li>6 cups of filtered water<\/li>\n<li>2 cups <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"CookinPellets Apple Mash\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/cookinpellets-apple-mash\/\" data-shortcode=\"true\">Apple<\/a> Cider vinegar<\/li>\n<li>\u00bd cup Pickling &amp; Canning salt &#8230; <em>Do not use regular table or sea salt<\/em><\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><strong>I<\/strong><\/span><strong><span style=\"text-decoration: underline;\">ngredients for each quart jar<\/span>:<\/strong><\/p>\n<ul>\n<li>8 cloves of garlic, peeled and sliced in half<\/li>\n<li>\u00bd tsp mustard seed<\/li>\n<li>8 fresh dill sprigs\/heads<\/li>\n<li>1 tsp pepper corn<\/li>\n<li>\u00bd tsp onion powder<\/li>\n<li>1 tsp dehydrated minced\/chopped onion<\/li>\n<li>\u00bc tsp crushed red pepper<\/li>\n<\/ul>\n<p><strong><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/strong><\/p>\n<ul>\n<li>Tightly pack sliced cucumbers spears and\/or slices in each quart jar<\/li>\n<li>Pour pickling brine over cukes<\/li>\n<li>Cover tightly with lids and turn the jars upside-down and right-side up a couple of times to distribute the seasoning<\/li>\n<li>Loosen the lid and allow to sit on the counter for 3 days, shaking or turning them occasionally<\/li>\n<li>On the 4th day, tighten the lids, and refrigerate the pickles<\/li>\n<li>Most recipes state that these Claussen\/style pickles will keep in the refrigerator for 6 months to a year<\/li>\n<\/ul>\n<p><strong><span style=\"text-decoration: underline;\">Disclaimer<\/span>:<\/strong><br \/>\nThis is my first attempt at making these pickles so there are no guarantees made &#8230;
