{"id":470,"date":"2011-02-27T19:44:02","date_gmt":"2011-02-28T03:44:02","guid":{"rendered":"http:\/\/www.smokinpetebbq.com\/?p=470"},"modified":"2011-02-27T19:44:02","modified_gmt":"2011-02-28T03:44:02","slug":"sausage-stuffed-hickory-smoked-pork-loin","status":"publish","type":"post","link":"https:\/\/www.smokinpetebbq.com\/wordpress\/sausage-stuffed-hickory-smoked-pork-loin\/","title":{"rendered":"Sausage Stuffed Hickory Smoked Pork Loin"},"content":{"rendered":"<p>Took a 4 lb Pork Loin and stuffed it with homemade breakfast sausage, mushrooms, celery, Mexican blend shredded cheese, and cabbage.\u00a0 I&#8217;m a big fan of cabbage and wanted to see what it would look and taste like.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Pork\/SausageStuffedLoin02272011\/stuffedloin1.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>Cooked the ingredients, mixed in some cheese and stuffed the Pork Loin in a pocket that my Butcher prepared for me.\u00a0 That baby is stuffed to the gills <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/forum.bradleysmoker.com\/Smileys\/default\/grin.gif\" alt=\"Grin\" border=\"0\" \/> Rubbed the Loin with Roasted Garlic <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">EVOO<\/a> and <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Fagundes Seasoning\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/fagundes-seasoning\/\" data-shortcode=\"true\">Fagundes Seasoning<\/a>.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Pork\/SausageStuffedLoin02272011\/stuffedloin2.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>PID set to 225\u00baF.\u00a0 Applied 3 hours of <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Premium 100% Hickory\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/premium-100-hickory\/\" data-shortcode=\"true\">Hickory<\/a> smoke and pulled it at an IT of 167\u00baF.\u00a0 I realize that&#8217;s a bit high for some but SWMBO insists that there shall be NO pink when it comes to Pork <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/forum.bradleysmoker.com\/Smileys\/default\/undecided.gif\" alt=\"Undecided\" border=\"0\" \/> Here&#8217;s a shot before I pulled the Stuffed Pork Loin from the OBS.\u00a0 Took me 4 hours and 45 minutes.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Pork\/SausageStuffedLoin02272011\/stuffedloin3.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>Made some Dungeness Crab and Shrimp Stuffed Mushrooms for a side dish &#8230; after all, they&#8217;ll be sitting on the side of my dish <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/forum.bradleysmoker.com\/Smileys\/default\/grin.gif\" alt=\"Grin\" border=\"0\" \/> <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/forum.bradleysmoker.com\/Smileys\/default\/grin.gif\" alt=\"Grin\" border=\"0\" \/><\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Pork\/SausageStuffedLoin02272011\/stuffedloin4.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>You can see how the pocket provides an ample space for stuffing.\u00a0 Unfortunately, all the cheese oozed out during the smoke.\u00a0 Not before it infused a cheesy flavor to the stuffing &#8230; but made a mess inside the OBS.\u00a0 Sausage and cabbage are a good combination together.\u00a0 Will have to post my &#8220;Bubble and Squeak&#8221; recipe with is mostly comprised of sausage and cabbage &#8230; Good stuff Homey &#8230;<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Pork\/SausageStuffedLoin02272011\/stuffedloin5.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>The money $$hot &#8230;
