Lessons Learned"},"content":{"rendered":"<p>Well, I learned I&#8217;m not the little sausage maker &#8230; YET <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/forum.bradleysmoker.com\/Smileys\/default\/grin.gif\" alt=\"Grin\" border=\"0\" \/> <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/forum.bradleysmoker.com\/Smileys\/default\/cry.gif\" alt=\"Cry\" border=\"0\" \/> Been putting it off for so long.\u00a0 Just like anything else, you fear the unknown!\u00a0 So I finally got the Grinder and Stuffer out of their boxes.<\/p>\n<p>Decided to make my sausage debut with some Sausage Maker Breakfast Sausage Seasoning and 12 lbs of Pork Butt.\u00a0 Here is my setup &#8211; ready for action.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Sausage\/Breakfast02132011\/breakfast1.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>Trimmed the Pork Butt into strips, popped them into the freezer for a while and had no problems grinding things up.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Sausage\/Breakfast02132011\/breakfast2.jpg?resize=520%2C390\" alt=\"\" width=\"520\" height=\"390\" border=\"0\" \/><\/p>\n<p>The infamous taste test.\u00a0 Found the sausage to be very lean compared to store bought sausage like Jimmy Dean.\u00a0 There was no fat to be found in the pan.\u00a0 I actually had to add a touch of <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">EVOO<\/a> to prevent the sample from burning.\u00a0 Is this normal or should I plan on adding more fat?\u00a0 It was scrumptious flavor wise <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/forum.bradleysmoker.com\/Smileys\/default\/grin.gif\" alt=\"Grin\" border=\"0\" \/> I&#8217;ve read so many people say they would never go back to store bought and now I know why.\u00a0 Yummmmm &#8230; great stuff!!<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Sausage\/Breakfast02132011\/breakfast3.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>Made 5 lbs of patties<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Sausage\/Breakfast02132011\/breakfast4.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>Reserved the rest for my 1st stuffing endeavor.\u00a0 Loaded and ready.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Sausage\/Breakfast02132011\/breakfast5.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>I quickly learned that I bought the wrong Sausage Collagen Casings.\u00a0 I bought 38 mm Smoked Casings.\u00a0 Stopped when I realized these Breakfast Sausages were going to be bigger than Kielbasas <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/forum.bradleysmoker.com\/Smileys\/default\/undecided.gif\" alt=\"Undecided\" border=\"0\" \/> Got a short feel for the stuffer but stopped before I made too many of these honkers!!\u00a0 Played with them a little, twisting, tying, etc before I unloaded the casing and stuffer back into the bowl.\u00a0 Since my local butcher, <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Fagundes Seasoning\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/fagundes-seasoning\/\" data-shortcode=\"true\">Fagundes<\/a> Meats, carries natural casings I&#8217;m going to get the casings from him and follow their advice.\u00a0 I couldn&#8217;t even twirl these babies.\u00a0 It was almost like this casing wasn&#8217;t suppose to do that.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Sausage\/Breakfast02132011\/breakfast6.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>Made patties out of this batch also and vacuumed sealed them for storage.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Sausage\/Breakfast02132011\/breakfast7.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>Retreated into the shadows licking my wounds and beginning to plan for my next batch.\u00a0 Going to make sure that I have the proper casings cause now that the ice has been broken &#8230; the sky&#8217;s the limit <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/forum.bradleysmoker.com\/Smileys\/default\/grin.gif\" alt=\"Grin\" border=\"0\" \/> <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/forum.bradleysmoker.com\/Smileys\/default\/grin.gif\" alt=\"Grin\" border=\"0\" \/> Summer Sausage, Kielbasas, Brats, etc.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Well, I learned I&#8217;m not the little sausage maker &#8230;
