src=\"https:\/\/i0.wp.com\/forum.bradleysmoker.com\/Smileys\/default\/grin.gif\" alt=\"Grin\" border=\"0\" \/> Visited my local butcher, <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Fagundes Seasoning\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/fagundes-seasoning\/\" data-shortcode=\"true\">Fagundes<\/a> Meats, and ordered 7 lbs of Top Sirloin marinated with Teriyaki which I picked up yesterday and threw in the fridge overnight.\u00a0 I really enjoy patronizing my local butcher cause Frank and\/or his staff always greets me by name and we have time to chew the fat and bounce ideas around.\u00a0 Kind of like the old days\u00a0 <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/forum.bradleysmoker.com\/Smileys\/default\/smiley.gif\" alt=\"Smiley\" border=\"0\" \/> <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/forum.bradleysmoker.com\/Smileys\/default\/wink.gif\" alt=\"Wink\" border=\"0\" \/> Another thing is I ordered 7 lbs and got 9 lbs <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/forum.bradleysmoker.com\/Smileys\/default\/grin.gif\" alt=\"Grin\" border=\"0\" \/> Service like that is hard to find these days and these guys are butchers not meat cutters (not that there&#8217;s anything wrong with that) like you find in your supermarkets.<\/p>\n<p>So here&#8217;s the 9 lbs marinaded and <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"FoodSaver Vacuum Sealer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/foodsaver-vacuum-sealer\/\" data-shortcode=\"true\">vacuum<\/a> sealed by my butcher going into the fridge overnight.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Beef\/JerkeyTopSirloin02032011\/jerky1.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>The Top Sirloin was sliced with the grain and I spent a little time cutting them down to size.\u00a0 Used 4 racks with Frog Mats and 4 Bradley Jerky Racks to double my OBS capacity.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Beef\/JerkeyTopSirloin02032011\/jerky2.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>With all the great recipes that the Bradley Forum members have shared it was hard choosing who&#8217;s method I would pick for my first batch of Jerky.\u00a0 When all was said and done I selected NePaSmoKer&#8217;s method.\u00a0 I preheated to 140\u00ba and slapped the 4 double racks in the OBS for an hour.\u00a0 Then bumped the PID to 150\u00ba and applied 5 pucks of <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Premium 100% Hickory\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/premium-100-hickory\/\" data-shortcode=\"true\">Hickory<\/a>.\u00a0 After the 1.6 hours of <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Premium 100% Hickory\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/premium-100-hickory\/\" data-shortcode=\"true\">Hickory<\/a> smoke I bumped it up to 165\u00ba for the next 4 hours.<\/p>\n<p>Here is what the Jerky looked like after the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Premium 100% Hickory\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/premium-100-hickory\/\" data-shortcode=\"true\">Hickory<\/a> smoke was applied to it.<\/p>\n<p>As per everyone&#8217;s gracious information I rotated the racks top to bottom and front to back every hour.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Beef\/JerkeyTopSirloin02032011\/jerky3.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>Here&#8217;s the money $$hot.\u00a0 This is maybe 2\/3 of the batch which I picked out and placed the remainder which consisted of 4 racks back into the OBS to cook a while longer.\u00a0 Pulled the Jerky when they bent before they were overdone and broke or cracked.\u00a0 In the whole batch I only had on piece which was overdone <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/forum.bradleysmoker.com\/Smileys\/default\/smiley.gif\" alt=\"Smiley\" border=\"0\" \/> Now they&#8217;re resting in a brown paper bag overnight in the fridge.\u00a0 Will <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"FoodSaver Vacuum Sealer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/foodsaver-vacuum-sealer\/\" data-shortcode=\"true\">vacuum<\/a> seal them tomorrow.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\"
