{"id":3820,"date":"2013-02-18T15:50:26","date_gmt":"2013-02-18T23:50:26","guid":{"rendered":"http:\/\/www.smokinpetebbq.com\/?p=3820"},"modified":"2013-02-18T15:50:26","modified_gmt":"2013-02-18T23:50:26","slug":"no-knead-light-wheat-bread-loaf","status":"publish","type":"post","link":"https:\/\/www.smokinpetebbq.com\/wordpress\/no-knead-light-wheat-bread-loaf\/","title":{"rendered":"No-Knead Light Wheat Bread Loaf"},"content":{"rendered":"<p><a href=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Recipes\/LightWheatBread02182013\/WheatBread9_zpsd39bacff.jpg\" target=\"_blank\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" alt=\"\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Recipes\/LightWheatBread02182013\/WheatBread9_zpsd39bacff.jpg?resize=512%2C384\" width=\"512\" height=\"384\" \/><\/a><\/p>\n<p>Have you noticed the rising costs of bread these days?\u00a0 Have your concerns for many additives increased?\u00a0 If so, you&#8217;re not alone.\u00a0 It&#8217;s no wonder that people are finding out that baking your own bread can ease the strain on your budget and\u00a0 is very satisfying. \u00a0 Once you&#8217;ve filled your kitchen with the aroma of freshly baked bread and tasted the wonderful results you&#8217;ll wonder why you didn&#8217;t do this before and I believe you&#8217;ll never buy another loaf of bread from a grocery store.<\/p>\n<p>I&#8217;ve always wanted to bake my own bread and a few years ago I even bought one of those bread makers.\u00a0 Nothing wrong with them but my loaves usually were very dense and I soon lost interest and returned to buying my bread.\u00a0 Then out of the clear blue I saw a posting on a cooking forum for No-Knead crusty bread in an Enameled Dutch Oven.\u00a0 Tried it &#8230; Loved it &#8230;\u00a0 Upon further research I discovered the No-Knead bread revolution started by Mr. Lahey\u2019s method which requires no kneading, uses no special ingredients, equipment or techniques and takes very little effort. <!--more--><\/p>\n<p>This post is not anything revolutionary but one of millions of No-Knead recipe (99% are very similar) that can easily be found on the Internet and did I mention that there is &#8220;No-Kneading&#8221;!!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Ingredients<\/strong><\/span>:<\/p>\n<ul>\n<li>2 \u00bd cups of bread or all-purpose flour<\/li>\n<li>1 \u00bd cups wheat flour<\/li>\n<li>\u00bd tsp instant yeast<\/li>\n<li>2 tsp salt<\/li>\n<li>1 \u00bd Tbsp honey (optional)<\/li>\n<li>1 \u00be cups of water<\/li>\n<\/ul>\n<p>In a large bowl combine flour, yeast and salt. Add 1\u00a0In a large bowl combine flour, yeast and salt. Add 1\u00a0 \u00be cups of water, and stir until blended; dough will be shaggy and sticky. Cover bowl with plastic wrap. Let dough rest at least 12 hours, preferably about 18, at warm room temperature, about 70 degrees.\u00a0 Dough is ready when its surface is dotted with bubbles. Lightly flour a work surface and place dough on it; sprinkle it with a little more flour, stretch gently to a rectangular shape, roll up dough from one end to the other and fold it under.<\/p>\n<p>Place the dough in a greased bread pan seam side down for the second rise.\u00a0 Allow the dough to rise for 1\u00bd to 2 hours until it reaches just above the top of the pan.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Recipes\/LightWheatBread02182013\/WheatBread1_zpsd2f59fb5.jpg\" target=\"_blank\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" alt=\"\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Recipes\/LightWheatBread02182013\/WheatBread1_zpsd2f59fb5.jpg?resize=160%2C120\" width=\"160\" height=\"120\" \/><\/a>\u00a0\u00a0\u00a0\u00a0 <a href=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Recipes\/LightWheatBread02182013\/WheatBread2_zps3210763a.jpg\" target=\"_blank\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" alt=\"\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Recipes\/LightWheatBread02182013\/WheatBread2_zps3210763a.jpg?resize=160%2C120\" width=\"160\" height=\"120\" \/><\/a>\u00a0\u00a0\u00a0\u00a0 <a href=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Recipes\/LightWheatBread02182013\/WheatBread3_zps7211168e.jpg\" target=\"_blank\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" alt=\"\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Recipes\/LightWheatBread02182013\/WheatBread3_zps7211168e.jpg?resize=160%2C120\" width=\"160\" height=\"120\" \/><\/a><\/p>\n<p>Bake the bread in a preheated 350\u00baF oven for 40-45 minutes but don&#8217;t rely on time.\u00a0 Breads, like everything else, needs to be baked\/cooked to it&#8217;s proper <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">internal temperature<\/a>.\u00a0 Breads should be golden in color, slightly darker around the edges. \u00a0A toothpick inserted in the center of the bread will come out either clean or with only a few crumbs clinging to it.\u00a0 If there are any damp crumbs on the toothpick, return the bread to the oven and continue baking.\u00a0 When using an instant read thermometer, most breads are finished baking at about 190\u00baF.\u00a0 Allow the bread to cool on a rack &#8230;
