Choice Beef Loin Tri-Tip Roasts.\u00a0 Each Tri-Tip Roast weighed in around 2\u00bd lbs and at $5.99\/lb they cost $16 each!\u00a0 But smoked\/cooked properly they&#8217;re worth every penny &#8230; <!--more--><\/p>\n<p>The U.S.D.A. Choice Tri-Tip Roasts were rubbed with Annie&#8217;s Roasted Garlic <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">Extra Virgin Olive Oil<\/a> and my special blend of spices which for now will remain a secret.\u00a0 If you click on the image you&#8217;ll note the wonderful marbling present in these Choice roasts.\u00a0 Wrapped the seasoned Tri-Tip roasts in plastic wrap and refrigerated overnight to allow those seasonings to work their magic.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Beef\/MAKTri-Tip01012013\/Tri-Tip1_zps8af20b9d.jpg\" target=\"_blank\"><img data-recalc-dims=\"1\" loading=\"lazy\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> Wood Pellet BBQ Smoker-Grill to 225\u00baF using Pacific Pellet <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Premium 100% Hickory\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/premium-100-hickory\/\" data-shortcode=\"true\">Hickory<\/a> BBQ Pellets.\u00a0 Smoked the Tri-Tip at 225\u00baF for an hour before increasing the temperature of the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> pit to 280\u00baF until the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">internal temperature<\/a> of the roasts reached 145\u00baF.<\/p>\n<p>Many people recommend cooking the Tri-Tip to an <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">internal temperature<\/a> of 125-135\u00ba and will use a reverse sear at high temps to finish their cook.\u00a0 Took a total time of about 3\u00bd hours from start to finish.\u00a0 \u00bd hour to preheat the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a>, 2\u00bd on the pellet grill, and 20 minutes under a foil tent.\u00a0 You should always rely on the meat <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">internal temperature<\/a> versus time.\u00a0 The meat will be done when it&#8217;s done &#8230;<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Beef\/MAKTri-Tip01012013\/Tri-Tip3_zps4b5e92f9.jpg\" target=\"_blank\"><img data-recalc-dims=\"1\" the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Premium 100% Hickory\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/premium-100-hickory\/\" data-shortcode=\"true\">Hickory<\/a> Smoked Tri-Tip roasts under a foil tent for 20 minutes before serving.\u00a0 A Tri-Tip roast has grains that run a couple of different directions and can be tricky to carve.\u00a0 Always carve a Tri-Tip across the grain.\u00a0 In the photo below, I carved half the Tri-Tip across the grain and the portion not sliced yet clearly shows the grain of the meat going from right to left and therefore I sliced across it.\u00a0 When carving, you should also hold the knife at a slight angle which enhances the tenderness and flavor.\u00a0 Cutting at an angle is called cutting on the bias.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Beef\/MAKTri-Tip01012013\/Tri-Tip6_zpsbbe6ed5c.jpg\" target=\"_blank\"><img
