{"id":361,"date":"2010-10-04T13:35:58","date_gmt":"2010-10-04T21:35:58","guid":{"rendered":"http:\/\/www.smokinpetebbq.com\/?p=361"},"modified":"2010-10-04T13:35:58","modified_gmt":"2010-10-04T21:35:58","slug":"applepecan-smoked-turkey-breast","status":"publish","type":"post","link":"https:\/\/www.smokinpetebbq.com\/wordpress\/applepecan-smoked-turkey-breast\/","title":{"rendered":"Apple\/Pecan Smoked Turkey Breast"},"content":{"rendered":"<p>Just finished devouring the best turkey I and DW have ever eaten.\u00a0 It was so moist and flavorful that words can&#8217;t do it justice.\u00a0 Yes, I smoked it in my OBS.\u00a0 A while back I asked for information on how to smoke some turkey breast I found on sale.\u00a0 I rubbed it with <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">olive oil<\/a>, and sprinkled my favorite rub all over it before I tossed it in.\u00a0 Run the Bradley at 250\u00b0, 3 hours of smoke (<a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"CookinPellets Apple Mash\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/cookinpellets-apple-mash\/\" data-shortcode=\"true\">Apple<\/a>\/Pecan is a good mix and that&#8217;s what I used), and take the IT to just under 165\u00b0 and FTC for a while.\u00a0 He actually pulls it at 161\u00ba and FTC cause he said there is so much mass, they keep cooking for a while.<\/p>\n<p>Here is the gobbler breast I got on sale for $10 each.\u00a0 Bought me 2 of these but I may be going back for a couple more<br \/>\n<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Turkey_Breast1.jpg?resize=480%2C375\" alt=\"\" width=\"480\" height=\"375\" border=\"0\" \/><br \/>\nThis is a complete breast with backbone, etc.\u00a0 1st thing I did was remove the backbone, split the breast bone with a clever and placed it on the rack.\u00a0 sprayed rack with Pam first.\u00a0 Rubbed it with <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">Olive oil<\/a> and applied some Pappy&#8217;s rub.\u00a0 Inserted Maverick meat probe<br \/>\n<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/TBreast10042010\/TBreast1.jpg?resize=480%2C375\" alt=\"\" width=\"480\" height=\"375\" border=\"0\" \/><br \/>\nPreheated OBS to 250\u00ba and loaded it with 3 hours smoke alternating Pecan and <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"CookinPellets Apple Mash\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/cookinpellets-apple-mash\/\" data-shortcode=\"true\">Apple<\/a> bisquettes<br \/>\n<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/TBreast10042010\/TBreast3.jpg?resize=480%2C375\" alt=\"\" width=\"480\" height=\"375\" border=\"0\" \/><br \/>\nIn goes the breast.\u00a0 Ambient temp today was around 70\u00ba.\u00a0 Breast IT was at 36\u00ba<br \/>\n<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/TBreast10042010\/TBreast2.jpg?resize=480%2C375\" alt=\"\" width=\"480\" height=\"375\" border=\"0\" \/><br \/>\n4 1\/2 hours later the IT was at 162\u00ba so I pulled the breast<br \/>\n<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/TBreast10042010\/TBreast4.jpg?resize=480%2C375\" alt=\"\" width=\"480\" height=\"375\" border=\"0\" \/><br \/>\nHere is the turkey breast before FTM &#8230; Yes, I said FTM instead of FTC cause I used KyNola&#8217;s suggestion and placed it in the &#8216;microwave&#8217; after the FT &#8211; hence the term FTM &#8230; Foil, Towel, Microwave.\u00a0 Notice the nice coloring.\u00a0 Must be the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">olive oil<\/a><br \/>\n<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/TBreast10042010\/TBreast5.jpg?resize=480%2C375\" alt=\"\" width=\"480\" height=\"375\" border=\"0\" \/><br \/>\nSTC did not say how long to FTC the gobbler so I guessed.\u00a0 The FTC time was 1 3\/4 hours.<br \/>\n<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/TBreast10042010\/TBreast6.jpg?resize=480%2C375\" alt=\"\" width=\"480\" height=\"375\" border=\"0\" \/><br \/>\nDinner time.\u00a0 Sliced up one of the breasts<br \/>\n<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/TBreast10042010\/TBreast7.jpg?resize=480%2C375\" alt=\"\" width=\"480\" height=\"375\" border=\"0\" \/><br \/>\nAnd now for the money shot &#8230;
