Herb Marinade before seasoning the chicken under and on the skin with Annie&#8217;s Roasted Garlic <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">Extra Virgin Olive Oil<\/a> and Jans Dry Rub.\u00a0 Wrapped the chicken tightly in plastic and refrigerated for 3 hours.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed1.jpg\" target=\"_blank\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed1.jpg?resize=160%2C120\" alt=\"\" width=\"160\" height=\"120\" \/><\/a>\u00a0\u00a0\u00a0\u00a0 <a href=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed2.jpg\" target=\"_blank\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed2.jpg?resize=160%2C120\" alt=\"\" width=\"160\" height=\"120\" \/><\/a>\u00a0\u00a0\u00a0\u00a0 <a href=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed3.jpg\" target=\"_blank\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed3.jpg?resize=160%2C120\" alt=\"\" width=\"160\" height=\"120\" \/><\/a><\/p>\n<p>With all the food safety talk and issues concerning stuffing being cooked inside poultry I wanted to make it easy to fix the stuffing and\u00a0 have all the ingredients fully cooked.\u00a0 I also desired to raise the flavor profiles up a notch and came up with the following easy stuffing recipe:<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Stuffing Ingredients<\/strong><\/span>:<\/p>\n<ul>\n<li>\u00bd lb Jimmy Dean Regular Pork Sausage<\/li>\n<li>Stove Top Chicken Stuffing Mix (6 oz)<\/li>\n<li>5 Baby Bella Mushrooms<\/li>\n<li>2 Celery stalks<\/li>\n<li>\u00bd Red Bell Pepper<\/li>\n<li>\u00bc small Red Onion<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><strong>Directions<\/strong><\/span>:<\/p>\n<ul>\n<li>Prepare Stove Top Chicken Stuffing Mix as per box directions<\/li>\n<li>Cook the Jimmy Dean Pork Sausage<\/li>\n<li>Saut\u00e9 diced Mushrooms, Celery, Red Bell Pepper &amp; Red Onion (seasoned to taste with garlic salt, seasoning salt, black pepper, and granulated garlic)<\/li>\n<li>Mix stuffing, sausage, and vegetables<\/li>\n<li>Stuff the chicken cavity loosely with an ample amount of stuffing.\u00a0 Retain the remaining stuffing and cook separately<\/li>\n<li>Tie the legs together and use Silicon Food Grade High Temperature <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Silicone Hot Cooking Bands\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/silicone-hot-cooking-bands\/\" data-shortcode=\"true\">Cooking Bands<\/a> to bind the bird<\/li>\n<li>Place Stuffed Chicken on a V-Rack over a foil pan to catch the drippings and keep your grill clean<\/li>\n<\/ul>\n<p>Preheated the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> Wood Pellet BBQ Smoker-Grill to 325\u00baF using Alder wood BBQ pellets.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed4.jpg\" target=\"_blank\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed4.jpg?resize=160%2C120\" alt=\"\" width=\"160\" height=\"120\" \/><\/a>\u00a0\u00a0\u00a0\u00a0 <a href=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed5.jpg\" target=\"_blank\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed5.jpg?resize=160%2C120\" alt=\"\" width=\"160\" height=\"120\" \/><\/a>\u00a0\u00a0\u00a0\u00a0 <a href=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed6.jpg\" target=\"_blank\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed6.jpg?resize=160%2C120\" alt=\"\" width=\"160\" height=\"120\" \/><\/a><\/p>\n<p>The stuffing recipe made more than enough so the extra stuffing was cooked for 1\u00bd hours alongside the stuffed chicken.\u00a0 Used the SRG on High with the lid Open to bake potatoes that were rubbed with Roasted Garlic <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">EVOO<\/a> and <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Fagundes Seasoning\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/fagundes-seasoning\/\" data-shortcode=\"true\">Fagundes Seasoning<\/a>.\u00a0 Steamed Asparagus and Cauliflower for the vegetable side.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed7.jpg\" target=\"_blank\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed7.jpg?resize=160%2C120\" alt=\"\" width=\"160\" height=\"120\" \/><\/a>\u00a0\u00a0\u00a0\u00a0 <a href=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed8.jpg\" target=\"_blank\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed8.jpg?resize=160%2C120\" alt=\"\" width=\"160\" height=\"120\" \/><\/a>\u00a0\u00a0\u00a0\u00a0 <a href=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed9.jpg\" target=\"_blank\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed9.jpg?resize=160%2C120\" alt=\"\" width=\"160\" height=\"120\" \/><\/a><\/p>\n<p>When roasting a stuffed Chicken you need to adjust your roasting time to compensate for the stuffing.\u00a0 I knew it would take longer and quickly learned just how long.\u00a0 My cooking logs, I document every cook, show that roasting a chicken at 325\u00baF in my <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> normally takes 2 hours + or &#8211; 15 minutes for the thickest part of the breast to reach 170\u00baF but with the stuffing it took 3 hours and 10 minutes.\u00a0 Roasting the stuffed chicken at 350\u00ba to 400\u00baF is an option to reduce the cooking time and produce crispier skin.<\/p>\n<p>Fortunately the additional time did not affect the timing of the dinner because the SRG baked potatoes were wrapped in foil and remained hot until served.\u00a0 The stuffed roasted chicken was rested under a foil tent for 20 minutes and steamed the vegetables while the chicken was resting.\u00a0 As noted earlier there are plenty of leftovers for tomorrow.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed11.jpg\" target=\"_blank\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed11.jpg?resize=160%2C120\" alt=\"\" width=\"160\" height=\"120\" \/><\/a>\u00a0\u00a0\u00a0\u00a0 <a href=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed12.jpg\" target=\"_blank\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed12.jpg?resize=160%2C120\" alt=\"\" width=\"160\" height=\"120\" \/><\/a>\u00a0\u00a0\u00a0\u00a0 <a href=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed14.jpg\" target=\"_blank\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKStuffed11102012\/Stuffed14.jpg?resize=160%2C120\" alt=\"\" width=\"160\" height=\"120\" \/><\/a><\/p>\n<p>The $Money$ Shot &#8230;
