{"id":338,"date":"2010-10-10T12:40:10","date_gmt":"2010-10-10T20:40:10","guid":{"rendered":"http:\/\/www.smokinpetebbq.com\/?p=338"},"modified":"2010-10-10T12:40:10","modified_gmt":"2010-10-10T20:40:10","slug":"apple-cold-smoked-cheeses","status":"publish","type":"post","link":"https:\/\/www.smokinpetebbq.com\/wordpress\/apple-cold-smoked-cheeses\/","title":{"rendered":"Apple Cold Smoked Cheeses"},"content":{"rendered":"<p>As an avid lover of cheeses I have been biding my time till the weather cools here in Central California.\u00a0 Decided to just go for it and used the advise of various Forum member posts.\u00a0 Purchased and setup a smoke adapter and used ice in the bottom of the OBS.<\/p>\n<p>Bought some cheese at Costco for the 1st smoke<br \/>\n<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Cheese10092010\/cheese1.jpg?resize=480%2C375\" alt=\"\" width=\"480\" height=\"375\" border=\"0\" \/><\/p>\n<p>Top rack: Kirkland Sharp Cheddar, Cabot Pepper Jack, and Yancey&#8217;s Fancy Horseradish Cheddar<br \/>\n2nd rack from top: Kirkland Monterey Jack and Costco Gouda<br \/>\n3rd rack from top: Cabot Extra Sharp Cheddar (aged 3 years) and Jarlsberg Swiss<br \/>\n<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Cheese10092010\/cheese2.jpg?resize=480%2C375\" alt=\"\" width=\"480\" height=\"375\" border=\"0\" \/><\/p>\n<p>Cheese sat at room temperature for an hour.\u00a0 Placed in OBS @ 8:45 PM with an ambient temperature of 70\u00ba.\u00a0 Maverick temp measured below top rack was 67\u00ba with a tray of ice on the bottom.\u00a0 Applied 2 hours of <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"CookinPellets Apple Mash\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/cookinpellets-apple-mash\/\" data-shortcode=\"true\">Apple<\/a> smoke<br \/>\n<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Cheese10092010\/cheese3.jpg?resize=480%2C375\" alt=\"\" width=\"480\" height=\"375\" border=\"0\" \/><\/p>\n<p>Was surprised at the amount of smoke generated.\u00a0 No wonder they say it tastes like an ashtray when first removed<br \/>\n<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Cheese10092010\/cheese4.jpg?resize=480%2C375\" alt=\"\" width=\"480\" height=\"375\" border=\"0\" \/><\/p>\n<p>After an hour the ambient temp dropped to 67\u00ba but the internal OBS temp rose to 78\u00ba<br \/>\nAfter 2 hours the ambient temp dropped to 65\u00ba and the internal OBS temp reached 81\u00ba<br \/>\nHere&#8217;s what it looked like<br \/>\n<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Cheese10092010\/cheese5.jpg?resize=480%2C375\" alt=\"\" width=\"480\" height=\"375\" border=\"0\" \/><\/p>\n<p>Let the cheese rest for an hour on the counter.\u00a0 It really reeked of smoke &#8211; like an ashtray.\u00a0 I know what an ashtray smells like cause I smoked for 30 years but quit 10+ years ago\u00a0 <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/forum.bradleysmoker.com\/Smileys\/default\/smiley.gif\" alt=\"Smiley\" border=\"0\" \/> Was smart enough not to taste it, even though I kind of wanted to, cause everyone has said how bad it tastes<br \/>\n<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Cheese10092010\/cheese6.jpg?resize=480%2C375\" alt=\"\" width=\"480\" height=\"375\" border=\"0\" \/><\/p>\n<p><a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"FoodSaver Vacuum Sealer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/foodsaver-vacuum-sealer\/\" data-shortcode=\"true\">Vacuum<\/a> packed and labeled for storage in the fridge for 3 to 4 weeks &#8230; Finished and hit the sack around 1 AM but it was worth it<br \/>\n<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Cheese10092010\/cheese7.jpg?resize=480%2C375\" alt=\"\" width=\"480\" height=\"375\" border=\"0\" \/><\/p>\n<p>Used 2 hours of <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"CookinPellets Apple Mash\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/cookinpellets-apple-mash\/\" data-shortcode=\"true\">Apple<\/a> for the 1st smoke cause that seemed to be the most common postings.\u00a0 Only time will tell but I think the cheese will turn out great.\u00a0 The cheese will be a great hit at Thanksgiving along with some smoked turkey breast.\u00a0 Will report back in 3 to 4 weeks.\u00a0 Want to thank everyone that has shared their experiences with smoked cheese.\u00a0 It made my first cheese smoke easy.\u00a0 Thinking that an OBS temp of 81\u00ba should not have harmed to process.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>As an avid lover of cheeses I have been biding my time till the weather cools here in Central California.\u00a0 Decided to just go for it and used the advise of various Forum member posts.\u00a0 Purchased and setup a smoke &hellip;
