{"id":298,"date":"2010-10-23T11:31:54","date_gmt":"2010-10-23T19:31:54","guid":{"rendered":"http:\/\/www.smokinpetebbq.com\/?p=298"},"modified":"2010-10-23T11:31:54","modified_gmt":"2010-10-23T19:31:54","slug":"smoked-chicken-tetrazzini","status":"publish","type":"post","link":"https:\/\/www.smokinpetebbq.com\/wordpress\/smoked-chicken-tetrazzini\/","title":{"rendered":"Smoked Chicken Tetrazzini"},"content":{"rendered":"<p>Had me some smoked chicken laying around the fridge after running my skin up or skin down spatchcock chicken test so I decided to try using it with a Tetrazzini recipe from &#8220;The Good Housekeeping Cookbook&#8221; that I have been using for a couple of decades now when I have leftover turkey.<\/p>\n<p>Figured what the heck &#8230; got nothing to lose.\u00a0 Here&#8217;s the chicken leftovers<br \/>\n<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/splatchcock%2010222010\/splatchcock4.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>The Smoked Chicken Tetrazzini casserole out of the oven<br \/>\n<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/splatchcock%2010222010\/tetrazzini1.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>The $$shot &#8230;<br \/>\n<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/splatchcock%2010222010\/tetrazzini2.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>It turned out to die for.\u00a0 The smoked chicken gave it that extra notch which we all can relate to. I prefer to use Angel Hair instead of Spaghetti and I use Knorr Caldo Con Sabor de Pollo (chicken flavor bouillon) for the stock in the sauce.\u00a0 If you&#8217;ve never had or made Tetrazzini it&#8217;s a great blend of flavors and a delicious option for leftover turkey or chicken.<\/p>\n<p>The recipe I use is from the 1973 Edition of &#8220;The Good Housekeeping Cookbook&#8221;. \u00a0The year after SWMBO and I got married \u00a0<img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/forum.bradleysmoker.com\/Smileys\/default\/grin.gif\" alt=\"Grin\" border=\"0\" \/> <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/forum.bradleysmoker.com\/Smileys\/default\/grin.gif\" alt=\"Grin\" border=\"0\" \/><\/p>\n<p>I use it as a guide for my leftover Turkey (will also use it for Smoked Turkey), Rotisserie Chicken, and now Smoked Chicken Tetrazzini. \u00a0I modify the recipe to fit our personal tastes. \u00a0First let me say that years ago I used to cook my own broiler-fryers like the recipe calls for but over the years I have just used leftover turkey or it&#8217;s a lot easier and flavorful to just get a couple of rotisserie chickens from Costco or a local supermarket.<\/p>\n<p>Here is the original recipe (before my personal modifications) &#8211; Note: omit steps 1 and 2 when using leftovers<br \/>\n<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/splatchcock%2010222010\/SmokedChickenTetrazzini.jpg?resize=476%2C655\" alt=\"\" width=\"476\" height=\"655\" border=\"0\" \/><\/p>\n<p>Smoked Chicken Tetrazzini \u00e0 la Smoker Pete<\/p>\n<ul>\n<li>Cook spaghetti or your favorite noodle. \u00a0SWMBO believes spaghetti is best but I like Angle Hair. \u00a0The updated recipe STC found calls for linguine<\/li>\n<li>While spaghetti is cooking:<\/li>\n<li>Saute a large onion, 1\/2 to 1 pound of sliced fresh mushroom, and squirt some lemon juice. \u00a0Set aside for sauce &#8211; I often substitute a couple small cans of drained mushrooms<\/li>\n<li>Make 4 cups of chicken broth using bouillon or canned broth. \u00a0Make 3 1\/2 cups of broth if using 1\/2 cup dry sherry (optional)<\/li>\n<li>Tetrazzini Sauce:<\/li>\n<li>I use a large pot to to make the sauce cause I think it&#8217;s better to mix everything together rather than spooning the sauce over the noodles<\/li>\n<li>In large pot, melt 1\/2 cup of butter or margarine on high<\/li>\n<li>Stir 1\/2 cup all-purpose flour to create a roux<\/li>\n<li>If desired, add salt, 1\/4 tsp nutmeg, 1\/2 tsp paprika, and\/or 1\/2 cup of sherry to roux<\/li>\n<li>Stir in 4 cups of hot chicken broth using a whisk until smooth and slightly thickened<\/li>\n<li>Remove from stove and whisk in 1 cup of half-and-half (I use fat-free half-in-half &#8211; gotta watch my weight) \u00a0<img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/forum.bradleysmoker.com\/Smileys\/default\/grin.gif\" alt=\"Grin\" border=\"0\" \/><\/li>\n<li>Add sauted onions and mushrooms to sauce<\/li>\n<li>Add 5 cups or more of large pieces of Smoked Chicken to complete the sauce<\/li>\n<li>Add spaghetti, angel hair, or your favorite noodle to the sauce and mix well<\/li>\n<li>Use a 13&#8243; by 9&#8243; baking dish &#8211; Greased or sprayed with PAM<\/li>\n<li>Pour Tetrazzini mixture in the baking dish<\/li>\n<li>Sprinkle with grated Parmesan and cover<\/li>\n<li>Place Tetrazzini in a preheated 350\u00ba oven<\/li>\n<li>Bake Tetrazzini for an hour. \u00a0Recipe calls for 20 minutes or until hot and bubbly<\/li>\n<li>Serve with your favorite vegetable or salad and garlic bread<\/li>\n<li>Makes 8 servings<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Had me some smoked chicken laying around the fridge after running my skin up or skin down spatchcock chicken test so I decided to try using it with a Tetrazzini recipe from &#8220;The Good Housekeeping Cookbook&#8221;
