{"id":288,"date":"2010-10-27T10:01:40","date_gmt":"2010-10-27T18:01:40","guid":{"rendered":"http:\/\/www.smokinpetebbq.com\/?p=288"},"modified":"2010-10-27T10:01:40","modified_gmt":"2010-10-27T18:01:40","slug":"hickory-smoked-corned-beef-and-cabbage","status":"publish","type":"post","link":"https:\/\/www.smokinpetebbq.com\/wordpress\/hickory-smoked-corned-beef-and-cabbage\/","title":{"rendered":"Hickory Smoked Corned Beef and Cabbage"},"content":{"rendered":"<p>First let me say that I love Corned Beef and Cabbage and have always simmered my Corned Beef for hours before preparing the cabbage, onions, carrots, and potatoes. \u00a0I have never cooked a Corned Beef in the oven so I wasn&#8217;t sure what to expect when I chose to smoke my first Corned Beef.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/CornedBeef10272010\/Corned1.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>Soaked the Corned Beef in water for 3 hours. \u00a0Changed the water every hour. \u00a0The Corned Beef had a pale appearance. \u00a0Dusted a small amount of spices just for grins.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/CornedBeef10272010\/Corned2.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>PID @ 250\u00ba \/ 2 hours of <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Premium 100% Hickory\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/premium-100-hickory\/\" data-shortcode=\"true\">hickory<\/a> \/ pulled when <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">Internal Temperature<\/a> reached 158\u00ba. It \u00a0took 4 \u00bc hours (it was 3.77 lbs). \u00a0It sure looked and smelled great!! \u00a0So far so good &#8230;<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/CornedBeef10272010\/Corned3.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>Here is the Corned Beef brisket after resting in foil for 20 minutes. \u00a0Certainly had a great smoke infused flavor and was quite moist &#8230; BUT as I sampled a slice I found it to be very tough, leathery, to the point where I could have used it for stick of gum cause I chewed, chewed, and then chewed but it kept it&#8217;s consistency. \u00a0Wasn&#8217;t anything like the boiled Corned Beef that I have enjoyed for so many years. \u00a0But it sure smelled and looked great.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/CornedBeef10272010\/Corned4.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>Popped it in the oven at 450\u00ba for 20 minutes to see if it would become chewable.<br \/>\nHere is the $$shot served with some boiled cabbage, onions, carrots and steamed potatoes.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" style=\"border: 0pt none;\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/CornedBeef10272010\/Corned5.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" border=\"0\" \/><\/p>\n<p>Alas, it was still tough! \u00a0Tried my best to chew a few pieces of Corned Beef but to no avail. \u00a0Since I love vegetables I decided to turn this into a vegan meal. \u00a0My thoughts are that I don&#8217;t think I did anything wrong since the Corned Beef was certainly cooked. \u00a0For now I will just revert to simmering my Corned Beef for hours on the stove. \u00a0Maybe those that have smoked a Corned Beef for immediate consumption might share their thoughts on the subject. \u00a0Should I have smoked the Corned Beef and placed it in the fridge overnight and served it tomorrow? \u00a0For clarification, I was not trying to make Corned Beef Pastrami.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>First let me say that I love Corned Beef and Cabbage and have always simmered my Corned Beef for hours before preparing the cabbage, onions, carrots, and potatoes. \u00a0I have never cooked a Corned Beef in the oven so I &hellip;
