{"id":2136,"date":"2012-07-30T08:08:02","date_gmt":"2012-07-30T16:08:02","guid":{"rendered":"http:\/\/www.smokinpetebbq.com\/?p=2136"},"modified":"2012-07-30T08:08:02","modified_gmt":"2012-07-30T16:08:02","slug":"hickory-smoked-chicken-quarters","status":"publish","type":"post","link":"https:\/\/www.smokinpetebbq.com\/wordpress\/hickory-smoked-chicken-quarters\/","title":{"rendered":"Hickory Smoked Chicken Quarters"},"content":{"rendered":"<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/QuartersJDR07302012\/QuartersJDR7.jpg?resize=512%2C384\" alt=\"\" width=\"512\" height=\"384\" \/><\/p>\n<p>I&#8217;ve often wondered why Chicken Legs (drumsticks) and\/or Thighs are always higher priced than Chicken Quarters since the quarter is a leg and thigh!?\u00a0 Guess they have to charge extra to separate the two pieces!\u00a0 Found some Chicken Quarters for 78\u00a2\/lb and figured it would serve us for 2 meals.<!--more--><\/p>\n<p>As you can see from the photo below, I always like to apply a glue and seasoning under and on the skin.\u00a0 Here I used Annie&#8217;s Roasted Garlic <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">Extra Virgin Olive Oil<\/a> and Jans Dry Rub.\u00a0 It&#8217;s actually an easy process and the results are worth the extra effort.\u00a0 Especially if you choose not to eat the skin.\u00a0 Just seasoning the skin and then removing it will give you a dull tasting chicken.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/QuartersJDR07302012\/QuartersJDR1.jpg?resize=512%2C384\" alt=\"\" width=\"512\" height=\"384\" \/><\/p>\n<p>Replaced the skin and inserted the Chicken Quarters in the refrigerator for 2 hours to allow the glue and seasoning to work it&#8217;s magic.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/QuartersJDR07302012\/QuartersJDR2.jpg?resize=512%2C384\" alt=\"\" width=\"512\" height=\"384\" \/><\/p>\n<p>Preheated the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> Wood Pellet Smoker-Grill to SMOKE (180\u00baF) using <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Premium 100% Hickory\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/premium-100-hickory\/\" data-shortcode=\"true\">Hickory<\/a>\u00a0wood BBQ pellets and smoked the Chicken Quarters for 2 hours.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/QuartersJDR07302012\/QuartersJDR3.jpg?resize=512%2C384\" alt=\"\" width=\"512\" height=\"384\" \/><\/p>\n<p>Bumped the temperature to 325\u00baF until the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">Internal Temperature<\/a> (IT) reached 180\u00baF+.\u00a0 Poultry dark meat should always be taken to at least 180\u00baF.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/QuartersJDR07302012\/QuartersJDR4.jpg?resize=512%2C384\" alt=\"\" width=\"512\" height=\"384\" \/><\/p>\n<p><strong>\u00a0Hidden Valley Oven Roasted Potatoes<\/strong>:<\/p>\n<ul>\n<li>Preheat Oven to 450\u00baF<\/li>\n<li>Cut potatoes into large wedges<\/li>\n<li>Place potatoes in a Ziplock bag and coat with <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">Extra Virgin Olive Oil<\/a><\/li>\n<li>Toss potatoes in bag with 1 oz (3 Tbsp) Hidden Valley Ranch Seasoning &amp; Salad Dressing Mix<\/li>\n<li>Bake in ungreased baking pan for 20 minutes at 450\u00ba.\u00a0 Flip potatoes with spatula<\/li>\n<li>Bake another 15 to 20 minutes at 450\u00ba until the spuds are brown and crisp<\/li>\n<\/ul>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/QuartersJDR07302012\/QuartersJDR5.jpg?resize=512%2C384\" alt=\"\" width=\"512\" height=\"384\" \/><\/p>\n<p>Took 2 hours and 35 minutes for the IT to reach 180\u00baF+.\u00a0 Rested the Chicken Quarters under a foil tent for 20 minutes prior to serving.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/QuartersJDR07302012\/QuartersJDR6.jpg?resize=512%2C384\" alt=\"\" width=\"512\" height=\"384\" \/><\/p>\n<p>The Money $Shot$ &#8230;
