{"id":2085,"date":"2012-07-17T15:25:21","date_gmt":"2012-07-17T23:25:21","guid":{"rendered":"http:\/\/www.smokinpetebbq.com\/?p=2085"},"modified":"2012-07-17T15:25:21","modified_gmt":"2012-07-17T23:25:21","slug":"smoked-bone-in-chicken-breasts","status":"publish","type":"post","link":"https:\/\/www.smokinpetebbq.com\/wordpress\/smoked-bone-in-chicken-breasts\/","title":{"rendered":"Smoked Bone-In Chicken Breasts"},"content":{"rendered":"<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKAppleBreast07162012\/Breast4.jpg?resize=512%2C384\" alt=\"\" width=\"512\" height=\"384\" \/><\/p>\n<p>Buying Chicken Breasts on sale in bulk is a great way to cut down on food costs but when there&#8217;s only 2 people you need to plan ahead and freeze portions for later use.\u00a0 I find that Seasoning and\/or Marinading the Chicken Breasts before freezing is a good way to infuse flavors and save time down the road.\u00a0 These 2 breasts were seasoned on\/under the skin with Annie&#8217;s Roasted Garlic <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">EVOO<\/a> and Head Country Seasoning prior to freezing weeks ago.\u00a0 When defrosting make sure you defrost in the refrigerator and not the counter top.\u00a0 This is where a little planning comes in cause it could take up to 2 days to defrost.<!--more--><\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKAppleBreast07162012\/Breast1.jpg?resize=512%2C384\" alt=\"\" width=\"512\" height=\"384\" \/><\/p>\n<p>When buying Chicken Breasts I prefer bone-in with the skin on.\u00a0 You&#8217;ll find that these are much less expensive than boneless breasts and will be very moist and flavorful when you smoke\/cook them.<\/p>\n<p>Preheated the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> Wood Pellet Smoker-Grill to 180\u00baF, the SMOKE Setpoint, using <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"CookinPellets Apple Mash\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/cookinpellets-apple-mash\/\" data-shortcode=\"true\">Apple<\/a> wood BBQ pellets.\u00a0 Smoked the Chicken Breasts for 2 hours.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKAppleBreast07162012\/Breast3.jpg?resize=512%2C384\" alt=\"\" width=\"512\" height=\"384\" \/><\/p>\n<p>Bumped the temperature to 325\u00baF after 2 hours of <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"CookinPellets Apple Mash\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/cookinpellets-apple-mash\/\" data-shortcode=\"true\">Apple<\/a> Smoke at 180\u00ba.\u00a0 Pulled the Chicken Breasts when the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">Internal Temperature<\/a> of the thickest part of the breast reached 170\u00baF.\u00a0 Rested the breasts under a foil tent for 15 minutes.\u00a0 USDA Recommended Safe Minimum <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">Internal Temperature<\/a> is 165\u00baF (180\u00baF for the leg and thigh) but I always take mine to 170\u00ba without drying out the Chicken.\u00a0 Took a total of 2 hours and 50 minutes plus 15 minutes for the foil tent rest.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKAppleBreast07162012\/Breast5.jpg?resize=512%2C384\" alt=\"\" width=\"512\" height=\"384\" \/><\/p>\n<p>&nbsp;<\/p>\n<p>The Money $Shot$ &#8230; <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"CookinPellets Apple Mash\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/cookinpellets-apple-mash\/\" data-shortcode=\"true\">Apple<\/a> Smoked Bone-In Chicken Breasts, potato salad, and fresh Corn on the Cob while it&#8217;s available &#8230;
