Quick &#038; Dirty Pulled Pork"},"content":{"rendered":"<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Pork\/MAKButts01162012\/Butt4.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>The uses for Pulled Pork are only limited by one&#8217;s imagination. \u00a0 Lately we&#8217;ve been treating ourselves to Mexican delicacies which use shredded Pork for tamales, tacos, burritos, tostadas, etc recipes.\u00a0 Only problem is that I don&#8217;t have a stash of Pulled Pork so I decided to use a quick &amp; dirty recipe to rectify the situation instead of using the time and tested &#8220;low and slow&#8221; method that can take up to 20+ hours.<!--more--><\/p>\n<p>Picked up 2 Boneless Pork Shoulders at Costco each weighing in at about 7 lbs.\u00a0 Using High Temperature Silicone <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Silicone Hot Cooking Bands\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/silicone-hot-cooking-bands\/\" data-shortcode=\"true\">Cooking Bands<\/a> to secure the loose ends of the Pork Shoulder where the bone was removed.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Pork\/MAKButts01162012\/Butt1.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>Rubbed the Pork Butts with Carolina Treet Original Cooking Barbecue Sauce for the glue and seasoned liberally with Head Country Championship Seasoning.\u00a0 Made sure to apply the glue and seasoning inside where the bone was removed.\u00a0 Wrapped the Pork Butts with plastic wrap and refrigerated overnight.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Pork\/MAKButts01162012\/Butt2.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>Preheated the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> Wood Pellet BBQ Smoker-Grill to 225\u00baF using <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Premium 100% Hickory\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/premium-100-hickory\/\" data-shortcode=\"true\">Hickory<\/a> wood BBQ pellets.\u00a0 Smoked the Pork Butts at 180\u00baF for 2 hours before bumping the temperature to 375\u00baF until the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">Internal Temperature<\/a> (IT) reached 160\u00baF.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Pork\/MAKButts01162012\/Butt3.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>Took 4 hours to reach an IT of 160\u00baF.\u00a0 With the &#8220;Low and Slow&#8221; traditional method of smoking Pork Butts it would have taken me 7 hours to get to this stage and the Butts would now go into a stall for hours.\u00a0 During the stall the magic with Pork Butts happen when the connective tissues and fats break down.<\/p>\n<p>Double wrapped the Pork Butts in foil and back into the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> at 375\u00baF until the IT reaches the 200\u00baF range.\u00a0 This procedure essentially bypasses the stall phase.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Pork\/MAKButts01162012\/Butt5.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>The Pork Butts were foiled already which made it easy to FTC.\u00a0 Took a total time of 5\u00bd hours for the Butts to reach an IT of 200\u00baF.\u00a0 Not bad considering that the &#8220;Low and Slow&#8221; method would have taken me 17+ hours and involved an overnight cook.\u00a0 Being Winter, it&#8217;s nice not to be up at all hours and having to worry about the ambient temperatures of an overnight smoke.\u00a0 Here&#8217;s one of the Pork Butts after a 3 hour FTC and ready to pull.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Pork\/MAKButts01162012\/Butt6.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>The pulled Pork was delicious!!\u00a0 The main difference I noticed using this method is that the bark is not as pronounced but still provided excellent flavoring.\u00a0 Once Spring and Summer roll around I will be using the &#8220;Low and Slow&#8221; method at 225\u00baF vs the &#8220;Quick &amp; Dirty&#8221; at 375\u00baF more often but there&#8217;s a lot to be said for not spending the better part of 2 days achieving that wondrous delicacy known as Pulled Pork &#8230;<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/BBQ%20Smoke\/Pork\/MAKButts01162012\/Butt7.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>The Money $Shot$ &#8230;\u00a0 A nice portion of <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Premium 100% Hickory\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/premium-100-hickory\/\" data-shortcode=\"true\">Hickory<\/a> Smoked Pulled Pork served with a side of Mashed Potatoes &amp;
