2\u00bc lb Chicken Half which is perfect.\u00a0 Rubbed the Chicken On\/Under the skin with Annie&#8217;s Roasted Garlic <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">EVOO<\/a> for the glue and Plowboys BBQ Yardbird Rub.\u00a0 Wrapped the Yardbird in plastic wrap and rested it in the fridge for 3 hours to allow the rub to work it&#8217;s magic.<\/p>\n<p><!--more--><\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKhalfPlowboy11212011\/half1.jpg?resize=480%2C640\" alt=\"\" width=\"480\" height=\"640\" \/><\/p>\n<p>Preheated the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> Wood Pellet BBQ Smoker-Grill to SMOKE (180\u00baF) with <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Premium 100% Hickory\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/premium-100-hickory\/\" data-shortcode=\"true\">Hickory<\/a> wood BBQ pellets.\u00a0 You can see that the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">EVOO<\/a> and Rub have done their job.\u00a0 Let the Chicken Half stand on the counter for 15 minutes while the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> was heating.\u00a0 The <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">Internal Temperature<\/a> at the thickest part of the breast was 44\u00baF.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKhalfPlowboy11212011\/half2.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>The IT after 2 hours of <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Premium 100% Hickory\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/premium-100-hickory\/\" data-shortcode=\"true\">Hickory<\/a> smoke was 120\u00baF at the breast.\u00a0 Bumped the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> pit temperature to 325\u00baF to finish the cook.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/MAKhalfPlowboy11212011\/half3.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>I prefer to take my Chicken and Turkey breasts to 170\u00baF rather than the generally accepted 165\u00baF.\u00a0 This helps to compensate for any poor Meat Probe placements.\u00a0 I also verify my MAK Meat Probes and\/or Maverick ET-732 Probes with my Thermapen Probe.\u00a0 When it comes to cooking meats to temperature it&#8217;s imperative to check and double check your work.\u00a0 You can never be too careful.<\/p>\n<p>Took 3 hours from start to finish for the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Premium 100% Hickory\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/premium-100-hickory\/\" data-shortcode=\"true\">Hickory<\/a> smoked Plowboys Yardbird Rubbed half Chicken to reach an IT of 170\u00baF at the thickest part of the breast.\u00a0 This normally insures that the leg and thigh reaches an IT of 180\u00baF+.\u00a0 Rested the Half Chicken under a foil tent for 15 minutes before serving.\u00a0 My better half prefers the dark meat of the leg and thigh and I prefer the white meat of the breast!\u00a0 Works out perfectly &#8230;<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\"
