We love it so much that we buy our Tri Tips peeled in bulk. <span class=\"ILfuVd NA6bn\"><span class=\"hgKElc\">Peeled tri tips have the fat cap already removed. My Costco sells USDA Choice grade and Prime grade Tri Tips. We, on the West Coast, are very familiar with this cut of beef which comes from the bottom butt sirloin subprimal. It is a small triangular muscle, usually 1\u00bd to 2\u00bd lbs per side of beef. <\/span><\/span><span class=\"ILfuVd NA6bn\"><span class=\"hgKElc\">Incorrectly slicing meat can make a perfectly smoked roast tough and chewy. Within the tri-tip cut, two different grains intersect: approximately half of the roast contains fibers running vertically and the other half contains long muscle fibers coming in at an angle.<\/span><\/span><\/p>\n<\/div><\/div><\/div><\/div><div id=\"pg-15555-2\"  class=\"panel-grid panel-no-style\" ><div id=\"pgc-15555-2-0\"  class=\"panel-grid-cell\" ><div id=\"panel-15555-2-0-0\" class=\"so-panel widget widget_virtue_about_with_image virtue_about_with_image panel-first-child panel-last-child\" data-index=\"2\" ><div class=\"kad_img_upload_widget kt-shape-type-kt-image-shape-standard kt-image-align-center kt-image-widget-widget-2-0-0\"><a Finished smoking\/cooking for approximately 1 hour at 235\u00baF until the <a class=\"thirstylink\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" target=\"_blank\" rel=\"nofollow noopener\">internal temperature<\/a> at the thickest part of the roast reached 145\u00baF. Rested the roast loosely under a foil tent for 10 minutes before thinly slicing against the grain(s). As you can see from the photos, 145\u00baF produces a nice medium rare output. For rarer results, pull the roast at 135\u00baF.<\/p>\n<p>Served with a side of scalloped potatoes and an Oriental salad. Simple but scrumptious meal made even easier by getting the sides from Costco. Easy peasy ...
