The stuffing issue comes down to safety concerns which have to do with salmonella and other bacteria. Salmonella can come from eggs in stuffing or from the interior surface of the turkey's cavity. If the bird is removed from the wood pellet grill before the stuffing reaches 165\u00b0F, some bacteria could remain alive and make diners sick. Actually, if you cook the stuffing outside the turkey it's no longer \"stuffing\" - it's \"dressing\". By removing the backbone, the turkey is smoked flat, increasing the surface area of exposed meat this speeding up the smoking\/cooking time. It makes it much easier to cook the white and dark meat evenly - meaning the breast will stay juicy.<\/p>\n<p>Rubbed roasted garlic <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">extra virgin olive oil<\/a> under\/on the skin before seasoning under\/on the skin with <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Dry Rub Recipes\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/dry-rub-recipes\/\" data-shortcode=\"true\">Jan's Original Dry Rub<\/a> (page 168 of my cookbook, <a class=\"thirstylink\" title=\"The Wood Pellet Smoker and Grill Cookbook\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/the-wood-pellet-smoker-and-grill-cookbook\/\" target=\"_blank\" rel=\"nofollow noopener\" data-nojs=\"false\" data-linkid=\"11161\">The Wood Pellet Smoker and Grill Cookbook<\/a>). Wrap the spatchcocked turkey with plastic wrap and refrigerate for at least 4 hours or overnight.<\/p>\n<p>A spatchcock turkey can't physically fit on my Green Mountain Grills WiFi Controlled <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"GMG Davy Crockett Grill\/Smoker\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/gmg-2018-green-mountain-grill-davy-crockett-grill-smoker-with-cover-new-design\/\" data-shortcode=\"true\">Davy Crockett<\/a> so I used my <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> wood pellet smoker grill.\u00a0 Preheat your wood pellet smoker grill to 180\u00b0F using CookinPellets.com <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Premium Perfect Mix\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/premium-perfect-mix\/\" data-shortcode=\"true\">Premium Perfect Mix<\/a> wood pellets. Smoke the turkey for 2\u00bd hours before increasing the grill temp to 325\u00b0F. Finish cooking the spatchcock turkey until the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">internal temperature<\/a> reaches 170\u00b0F at the thickest part of the breast.
