{"id":1536,"date":"2011-10-25T09:02:26","date_gmt":"2011-10-25T17:02:26","guid":{"rendered":"http:\/\/www.smokinpetebbq.com\/?p=1536"},"modified":"2011-10-25T09:02:26","modified_gmt":"2011-10-25T17:02:26","slug":"roasted-chicken-thighs-and-potatoes","status":"publish","type":"post","link":"https:\/\/www.smokinpetebbq.com\/wordpress\/roasted-chicken-thighs-and-potatoes\/","title":{"rendered":"Roasted Chicken Thighs and Potatoes with Butternut Squash"},"content":{"rendered":"<p><a href=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/SRG\/ThighsSpuds10242011\/ThighsSpuds6.jpg\" target=\"_blank\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/SRG\/ThighsSpuds10242011\/ThighsSpuds6.jpg?resize=512%2C384\" alt=\"\" width=\"512\" height=\"384\" \/><\/a><\/p>\n<p>The Money $Shot$ &#8230; Roasted Chicken Thighs, Baked Potato, with a side of Baked Butternut Squash &#8230; This was our first exposure to Baked Butternut Squash and although it turned out scrumptious I think we&#8217;ll use it as a substitute for potatoes, rice, or pasta.\u00a0 The Baked Potato speaks for itself but the two together was a bit much and needed a green salad or other vegetable for the side.\u00a0 Bon App\u00e9tit !!<\/p>\n<p><!--more--><\/p>\n<p>For a quick and delectable meal you can&#8217;t beat the performance of the Char-Broil The Big Easy Infrared Smoker, Roaster and Grill (SRG).\u00a0 Scrubbed the Potatoes, rubbed them with Annie&#8217;s Roasted Garlic <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">EVOO<\/a>, and seasoned them with <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Fagundes Seasoning\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/fagundes-seasoning\/\" data-shortcode=\"true\">Fagundes Seasoning<\/a>.\u00a0 Trimmed the Fresh Foster Farms Chicken Thighs of excess skin and fat.\u00a0 Rubbed the Thighs On\/Under the skin with Annie&#8217;s Roasted Garlic <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">EVOO<\/a> for the glue and applied a liberal amount of Jans Dry Rub.<\/p>\n<p>Inserted the Potatoes in the SRG 20 minutes before the Chicken Thighs since experience has shown that it will take me 1+ hours for the spuds to reach an <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">Internal Temperature<\/a> (IT) of 210\u00baF and 45+ minutes for an IT of 180\u00baF on the Chicken Thighs.\u00a0 You want to make sure that the Chicken Thighs are below the potatoes &#8230; You don&#8217;t want the raw chicken dripping on the potatoes!!<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/SRG\/ThighsSpuds10242011\/ThighsSpuds1.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>Reinserted the Chicken Thighs and Potatoes into the SRG set on High with the lid Open.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/SRG\/ThighsSpuds10242011\/ThighsSpuds2.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>Pulled the Chicken Thighs after the IT reached 180\u00baF+ and rested the Thighs for 15 minutes.\u00a0 Timing worked out great as the Roasted\/Baked Potatoes reached an IT of 210\u00baF.\u00a0 Don&#8217;t you just love it when everything comes together as planned!?<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/SRG\/ThighsSpuds10242011\/ThighsSpuds3.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>Prepared and baked a Butternut Squash in the oven while the Chicken Thighs and Potatoes were roasting in the SRG.<\/p>\n<h3>Baked Butternut Squash Ingredients:<\/h3>\n<ul>\n<li><em>1 butternut squash (2 pounds)<\/em><\/li>\n<li>2 tablespoons <em>butter, melted<\/em><\/li>\n<li>1\/4 teaspoon <em>salt<\/em><\/li>\n<li>1\/8 teaspoon <em>ground cinnamon<\/em><\/li>\n<li>1\/8 teaspoon <em>ground nutmeg<\/em><\/li>\n<li>1\/8 teaspoon <em>pepper<\/em><\/li>\n<li><em>6 teaspoons brown sugar, <em>divided<\/em><\/em><\/li>\n<\/ul>\n<p>Cut squash in half lengthwise; discarded seeds. Brushed squash halves with butter.\u00a0 Combined the salt, cinnamon, nutmeg and pepper; sprinkled over squash halves. Placed 2 teaspoons brown sugar in each half. Sprinkled remaining brown sugar over cut sides of squash.<\/p>\n<p>Baked at 375\u00b0F for 60+ minutes until squash was tender.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/SRG\/ThighsSpuds10242011\/ThighsSpuds4.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n","protected":false},"excerpt":{"rendered":"<p>The Money $Shot$ &#8230;
