Short ribs come from the beef chuck portion and not the rib portion. They are the five short ribs from the chuck section that are too small to be used for good steaks. The meat in between these bones is from muscle that is used heavily, and therefore has less tenderness but much more flavor. Since short ribs come from the area between the chuck and rib, they combine characteristics of both cuts. Short ribs get the rich marbling of rib steaks with the deep beefy flavor of chuck roast. Traditionally, beef short ribs are braised (A combination of dry and moist cooking methods where you sear the meat and then bake the meat in a liquid), or smoked low-and-slow till the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">internal temperature<\/a> reaches 200\u00ba - 205\u00baF.<br \/>\n<span style=\"font-size: 10px;\">Short Rib information courtesy of Lake Geneva Country Meats website. <\/span><br \/>\n<\/span><\/p>\n<\/div><\/div><\/div><\/div><div id=\"pg-14562-2\"  class=\"panel-grid panel-no-style\" ><div id=\"pgc-14562-2-0\"  class=\"panel-grid-cell\" ><div id=\"panel-14562-2-0-0\" class=\"so-panel widget widget_black-studio-tinymce widget_black_studio_tinymce panel-first-child panel-last-child\" data-index=\"2\" ><div class=\"textwidget\"><p>Trim off the fat cap, membrane and silver skin from the top side of the short ribs. Smoke the beef short ribs for 3 hours at 225\u00baF before bumping the pit temperature to 250\u00baF. To help prevent your food from sticking to the grill grates be sure to use one or more <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Teflon grill mat\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/teflon-grill-mat\/\" data-shortcode=\"true\">Teflon grill mat<\/a>. Continue smoking the short ribs at 250\u00baF for approximately another 3\u00bd hours until the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">internal temperature<\/a> of the ribs reach 200\u00ba - 205\u00baF. The short ribs should be tender and almost falling off the bone.
