{"id":1455,"date":"2011-09-22T12:06:00","date_gmt":"2011-09-22T20:06:00","guid":{"rendered":"http:\/\/www.smokinpetebbq.com\/?p=1455"},"modified":"2011-09-22T12:06:00","modified_gmt":"2011-09-22T20:06:00","slug":"pecan-smoked-terriyaki-brined-spatchcock-chicken","status":"publish","type":"post","link":"https:\/\/www.smokinpetebbq.com\/wordpress\/pecan-smoked-terriyaki-brined-spatchcock-chicken\/","title":{"rendered":"Pecan Smoked Terriyaki Brined Spatchcock Chicken"},"content":{"rendered":"<p>Brined a fresh Foster Farms Chicken for 5 \u00bd hours using the following:<\/p>\n<ul>\n<li>\u00bd Gallon of Water<\/li>\n<li>\u00bd Cup of Sugar<\/li>\n<li>\u00bd Cup of Kosher Salt<\/li>\n<li>1 Cup (8 fl oz) KC Masterpiece Honey Terriyaki Marinade<\/li>\n<\/ul>\n<p>Spatchcocked the Chicken and rubbed ON\/Under the skin with Roasted Garlic <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">EVOO<\/a> and Jans Dry Rub.\u00a0 The menu will include Potato Wedges roasted in the Char-Broil The Big Easy Infrared Smoker, Roaster and Grill (SRG), and Corn on the cob.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/TerriyakiBrinedSpatchcock09212011\/TerriyakiBrine1.jpg?resize=480%2C640\" alt=\"\" width=\"480\" height=\"640\" \/><\/p>\n<p>Preheated the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> General Wood Pellet BBQ Smoker-Grill to SMOKE (180\u00ba) using Pecan wood BBQ pellets.\u00a0\u00a0Inserted the Terriyaki Brined Spatchcock Chicken for 2 hours of Smoke.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/TerriyakiBrinedSpatchcock09212011\/TerriyakiBrine2.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>The <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> General Wood Pellet BBQ Smoker-Gril<a href=\"http:\/\/www.yardandpool.com\/ProductDetails.asp?ProductCode=ep-429-2g&amp;Click=16767\" target=\"_blank\">l<\/a> produces volumes of Smoke on the SMOKE and other low temperature settings.\u00a0 After 2 hours of Smoke the thickest part of the breast was at 110\u00baF and I Bumped the temperature to 325\u00baF until the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">Internal Temperature<\/a> reached 165\u00baF.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/TerriyakiBrinedSpatchcock09212011\/TerriyakiBrine3.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>While the Terriyaki Brined Spatchcock Chicken was being scrumptiously prepared in the\u00a0<a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a>, it was time to prep the scrubbed potatoes.\u00a0 Cut the potatoes into wedges and coated them with Annie&#8217;s Roasted Garlic <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">EVOO<\/a> and Johnny&#8217;s Garlic Spread Seasoning.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/TerriyakiBrinedSpatchcock09212011\/TerriyakiBrine4.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>I believe it&#8217;s important for me to document in detail all my cooks so I can better time when to prep and cook the sides and garnishments.\u00a0 After checking my &#8220;Little Black Book&#8221; I know that the Terriyaki Brined Spatchcock Chicken will take 3 hours \u00b1 15 minutes.\u00a0 Add 20 minutes of resting under a foil tent bringing the total time to ~ 3 \u00be hours.<\/p>\n<p>It will take ~50 minutes for the Potato Wedges to roast in the\u00a0SRG &#8230; All I need is some simple math to determine when to insert the spuds in.\u00a0 The Infrared\u00a0SRG does not require preheating but I just can&#8217;t bring myself not to.\u00a0 Set the\u00a0SRG on HIGH with the Lid Open.\u00a0 15 minutes later I closed the lid for 5 minutes to brown the tater wedges a bit.\u00a0 Finished the Potato Wedges with the Lid Open.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/TerriyakiBrinedSpatchcock09212011\/TerriyakiBrine5.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>After 2 hours of Smoke @180\u00baF, it took another hour and 5 minutes @325\u00baF for the IT to reach 165\u00baF.\u00a0 Here&#8217;s the golden brown Pecan Smoked Terriyaki Brined Spatchcock Chicken before being tented under foil for 20 minutes.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/TerriyakiBrinedSpatchcock09212011\/TerriyakiBrine7.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>Potato Wedges turned out great along with the Corn on the cob, which took 25 minutes from start to finish using the Camp Chef 3 Burner Stove.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/TerriyakiBrinedSpatchcock09212011\/TerriyakiBrine8.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>The money $shot &#8230;
