First up was a 7 lb Bone-In Turkey Breast that I bought last Thanksgiving. It was one of those loss leader items that my local grocery store was selling to get people into the doors. Buy One Get One for Free! Practiced safe defrosting methods and spent a few days defrosting the turkey breast in the refrigerator. Nothing but pure smoked turkey white meat -\u00a0 it doesn't get any better than this.<\/p>\n<p>Hoping to be able to go to Costco tomorrow morning and get some much needed supplies ... If they have anything left on the shelves. I'll keep a positive thought! Some TP and basic staples would be nice.<\/p>\n<p>In the spirit of keeping my cooks as simple as possible I rubbed roasted garlic <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">extra virgin olive oil<\/a> on and under the skin and seasoned on and under the skin using a combination of <a href=\"https:\/\/amzn.to\/39DVmzr\" target=\"_blank\" rel=\"noopener\">Pete's Western Rub<\/a> and McCormick Grill Mates <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"McCormick Montreal Chicken Seasoning\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mccormick-montreal-chicken-seasoning\/\" data-shortcode=\"true\">Montreal Chicken Seasoning<\/a>. You can find the recipe for <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Dry Rub Recipes\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/dry-rub-recipes\/\" data-shortcode=\"true\">Pete's Western Rub<\/a> rub on page 169 of my cookbook. <a href=\"https:\/\/amzn.to\/39DVmzr\" target=\"_blank\" rel=\"noopener\">The Wood Pellet Smoker &amp; Grill Cookbook<\/a>. Wrapped the bone-in turkey breast in plastic wrap and refrigerated for 4 hours.<\/p>\n<p>Preheated my <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> wood pellet smoker grill to 180\u00baF using <a href=\"https:\/\/amzn.to\/3dUxrPA\" target=\"_blank\" rel=\"noopener\">CookinPellets.com Premium Perfect Mix wood pellets<\/a>. Smoked the bone-in turkey breast at 180\u00baF for two hours before bumping the pit temperature to 325\u00baF. Finished cooking the bone-in turkey breast for approximately another 2 hours until the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">internal temperature<\/a> at the thickest part of the breast reached 170\u00baF. Rested the turkey breast under a loose foil tent for 20 minutes before carving against the grain. The bone-in and the skin of the breast helps greatly in keeping the breast moist.
