&#8230; to Brine or NOT to Brine a Turkey &#8230;&#8221; \u00a0 Turns out that until I attended the California BBQ Association&#8217;s University &#8220;Authentic BBQ Advanced Class&#8221; it was always &#8230; NOT!!\u00a0 Well I have seen the light, tasted the results and it prompted me to definitely give brining\u00a0 a shot.<\/p>\n<p>My local grocery store had Bone-In Turkey Breasts and Turkeys on sale so I gobbled up 3 breasts for a great price of $9 each &#8211; No matter what the weight.\u00a0 Picked out the largest ones and saved over $30.<\/p>\n<p>Turkey Brine:<\/p>\n<ul>\n<li>1 Gallon of Water<\/li>\n<li>1 cup of Sugar<\/li>\n<li>\u00bd cup of Sea Salt<\/li>\n<li>1\/3 cup of Brown Sugar<\/li>\n<li>1 \u00bd cups of <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"CookinPellets Apple Mash\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/cookinpellets-apple-mash\/\" data-shortcode=\"true\">Apple<\/a> Juice<\/li>\n<li>Laury&#8217;s 12 oz Herb &amp; Garlic Marinade<\/li>\n<\/ul>\n<p>Into the fridge to brine overnight.\u00a0 A general rule to use for brinning is around one hour per pound.\u00a0 This breast was 9.4 lbs and was brined for 14 hours.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Turkey\/MAKBrinedTurkey09122011\/Brine1.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>Removed breast from brine and rubbed on\/under skin with <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">EVOO<\/a> and Jans Dry Rub.\u00a0 Preheated the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> Wood Pellet Smoker-Grill to 230\u00baF with <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Premium 100% Hickory\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/premium-100-hickory\/\" data-shortcode=\"true\">Hickory<\/a> wood BBQ pellets.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Turkey\/MAKBrinedTurkey09122011\/Brine2.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>Setpoint to SMOKE (~180\u00baF) for 2 hours.\u00a0 Bumped the temperature to 325\u00baF until the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">Internal Temperature<\/a> hit 165\u00baF.\u00a0 Rested under a foil tent for 20 minutes.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Turkey\/MAKBrinedTurkey09122011\/Brine4.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>You can see just how moist the Bone-In Turkey Breast turned out and the flavors were exquisite!!\u00a0 Can&#8217;t wait to use the leftovers to make a big batch of Turkey Tetrazzini &#8230;<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Turkey\/MAKBrinedTurkey09122011\/Brine5.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>The Money $Shot$ &#8230;
