{"id":1372,"date":"2011-09-14T14:45:27","date_gmt":"2011-09-14T22:45:27","guid":{"rendered":"http:\/\/www.smokinpetebbq.com\/?p=1372"},"modified":"2011-09-14T14:45:27","modified_gmt":"2011-09-14T22:45:27","slug":"roasted-injected-chickens-with-black-eyed-peas","status":"publish","type":"post","link":"https:\/\/www.smokinpetebbq.com\/wordpress\/roasted-injected-chickens-with-black-eyed-peas\/","title":{"rendered":"Roasted Injected Chickens with Black-Eyed Peas"},"content":{"rendered":"<p>Here&#8217;s a simple Poultry Injection recipe that will expand your repertoire using items most of us have at home:<\/p>\n<ul>\n<li>1 cup Chicken Broth (using chicken Bouillon provides ample salt)<\/li>\n<li>4 Tbsp Butter<\/li>\n<li>2 Tbsp Lemon Juice<\/li>\n<li>1 tsp Garlic Powder<\/li>\n<li>1 tsp fine Ground Pepper<\/li>\n<\/ul>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/InjectedChicken09082011\/Injected1.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>Injected the breasts, wings, legs, and thighs of two Foster Farms Chickens.\u00a0 Rubbed On\/Under skin with Annie&#8217;s Roasted Garlic <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">EVOO<\/a> and <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"McCormick Montreal Chicken Seasoning\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mccormick-montreal-chicken-seasoning\/\" data-shortcode=\"true\">Montreal Chicken Seasoning<\/a>.\u00a0 Covered with Plastic Wrap and placed the birds in the fridge for 4 hours.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/InjectedChicken09082011\/Injected2.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>Preheated the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"MAK Grills 2 Star General\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/mak-grills-2-star-general\/\" data-shortcode=\"true\">MAK 2 Star<\/a> General Wood Pellet BBQ Smoker-Grill to 325\u00baF using Pacific Pellet Gourmet BBQ <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Premium 100% Hickory\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/premium-100-hickory\/\" data-shortcode=\"true\">Hickory<\/a> wood BBQ pellets.\u00a0 Using Standard MAK Meat Probes, the 2 in the middle, and a Maverick ET-732 Meat Probe, on the right, to validate the performance of the prototype MAK M2 Armored Probe, pictured on the left.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/InjectedChicken09082011\/Injected3.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>An hour into the cook I started a <a href=\"http:\/\/www.smokinpetebbq.com\/?p=1313\" target=\"_blank\">Roasted Garlic test <\/a>to see which method produced the best Roasted Garlic in a Pellet Grill.\u00a0 You can see how using a Chicken Roaster Stand is great for capturing the drippings and keeping the MAK clean.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/InjectedChicken09082011\/Injected4.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>Pulled the Chickens when their <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">Internal Temperature<\/a> hit 165\u00baF in the breast which should have the legs and thighs at ~180\u00baF.\u00a0 Rested the Chickens under a foil tent for 20 minutes.\u00a0 Can you just image all that grease and drippings captured by the roasting stand sitting in the bottom of your grill?<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/InjectedChicken09082011\/Injected5.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>I find that there is no great need to soak beans\/peas overnight when you can use the Quick Soak method by bringing the Black-Eyed Peas to a rapid boil for 2 minutes, cover, and let stand for 1+ hour.\u00a0 Here&#8217;s the delicious Black-Eyed Peas recipe that&#8217;s sure to be a hit at your table &#8230; even if you dislike Black-Eyed Peas like I do &#8230; But SWMBO really loves them:<\/p>\n<ul>\n<li>1lb bag of dried Black-Eyed Peas<\/li>\n<li>8 cups Chicken Broth<\/li>\n<li>Medium Onion<\/li>\n<li>6-7 Celery stalks including the inner leaves if available<\/li>\n<li>Red Bell Pepper<\/li>\n<li>14oz can of Stewed Tomatoes<\/li>\n<li>Tbsp crushed garlic or a few cloves of garlic<\/li>\n<li>2 Tbsp Tomato Bouillon<\/li>\n<li>Salt &amp; Pepper to taste<\/li>\n<\/ul>\n<p>Bring Black-Eyed Peas to a boil, turn down and simmer slowly for 2+ hours till Peas are tender.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/InjectedChicken09082011\/Injected6.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>The Money $Shot$ &#8230; A scrumptious tender moist Chicken Breast, serving of Cole Slaw, half a Roasted head of garlic, and some delectable Black-Eyed Peas on a bed or rice &#8230; Bon App\u00e9tit<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/i0.wp.com\/i854.photobucket.com\/albums\/ab105\/papa_peter\/Chicken\/InjectedChicken09082011\/Injected7.jpg?resize=480%2C360\" alt=\"\" width=\"480\" height=\"360\" \/><\/p>\n<p>Injected Chickens enhance the moisture and flavors of the chicken bringing them to new heights.\u00a0 There are multitudes of Injection recipes &#8211;
